Ok I have some ripe bananas and I have a bread maker. Any way I can use Cake flour, or all purpose flour? No nuts please!

Sure. Mash them up real well and mix in with your liquid, keeping your liquid the same total amount as your original bread recipe. You can use all purpose flour, but official bread machine flour always works best for making bread in a bread machine. I've always added 1/8 cup gluten flour as part of the total flour to get the extra rise to my bread. visit my web sites at http://crockpotmeals.wordpress.com and www.dipndo.com (for excellant unusual original pasta salads)

Although most banana bread we come across is a quick bread (meaning not leavened with yeast), there is no rule that says banana bread cannot be made with yeast -- and many people do. You can indeed use yeast, all purpose flour and a bread machine. See the link below for recipes.

I pulled this recipe off the web and edited it slightly. Bottom line if you don't want to use yeast is to mix it outside of the bread machine first, then use the Quick Bread setting to bake it. I hate nuts in bread too, LOL! :)

Banana Nut Bread for Machines

INGREDIENTS:
1/2 cup butter, melted
2/3 cup milk
2 eggs
2 1/2 cups all-purpose flour
1 cup white sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup mashed bananas (1 large, 2 small, etc.)

---------------------------------------------

DIRECTIONS:

Spray bread machine pan with vegetable oil spray.

In a separate bowl, premix ingredients in order listed.

Place mixture in bread machine pan.

Select the Quick Bread/Cake cycle. Press Start. Check after 1 minute to see if mixture is well blended.

Bake until cycle stops. Remove the pan, and cool completely (15-30 minutes) before removing bread from pan.

Here is a recipe or two for you. I hope your breadmaker has a sweet bread button, or just use the reg cycle.\

Caribbean Banana Bread

Large Loaf
1/3 C water
3/4 C mashed very ripe banana
2 T vegetable oil, margarine or butter (I use olive oil)
1 large egg
3/4 t salt
3 T brown sugar, packed
1 1/2 C white flour*
1 1/2 C whole-wheat flour
1 t ground nutmeg or cinnamon (bet pumpkin pie spice would be good)
1 1/4 t bread-machine or instant yeast
1/4 C each raisins and chopped pecans (optional)

* In Canada use all-purpose or bread flour; in the United States use bread flour.
(You don't have to use wheat flour. Just add the amt listed in white)

Extra Large Loaf
1/3 C water
1 C mashed very ripe banana (about 2 medium bananas)
3 T vegetable oil, margarine or butter (I use olive oil)
2 large eggs
1 t salt
1/4 C brown sugar, packed
2 C white flour*
2 C whole-wheat flour
1 1/4 t ground nutmeg or cinnamon (bet pumpkin pie spice would be good)
1 1/2 t bread-machine or instant yeast
1/3 C each raisins and chopped pecans (optional)

*In Canada use all-purpose or bread flour; in the United States use bread flour.

1. Add all ingredients except raisins and nuts to machine according to
manufacturer’s directions. Select sweet or white cycle.

2. Add raisins and nuts at ingredient signal (or about 20 to 30 minutes into cycle after the starting time).

Tip: Freeze overripe bananas either in their skins (the skins will turn black but the bananas are good for baking when thawed) or peel, mash and freeze in airtight containers or bags.

Because a bread machine has a built in cycle to "proof" (rise) the dough, it is meant for yeast breads. (banana bread is NOT a yeast bread)
