There is a possibility that Noah's flood did not cover the whole Earth

If Noah's flood happened in the Mesopotamia area, then God is not familiar with other races other than Jews, and others that inhabited the Mesopotamia area.......................................................................
.........................................Also, God seems to change through time, from accepting animal sacrifices in the old testament, to not wanting it in the new testament.

What happened?

Jesus happened. In the Old testament the law stated that any animal sacrifices had to be creatures that were pure and unblemished, not having any flaws and being healthy at the time of the sacrifice offering. They had to be of value to the one making the sacrifice, otherwise, there was no sacrifice.

Jesus is often referred to in the Bible as "The Lamb of God." No other creature in existence was pure enough to be offered as a sacrifice for the sin of the world, past, present and future.

As for the flood, since God created the entire world and all that is, therein, I don't believe we can say that He was not familiar with other races. Granted, the flood may have been in an isolated area.

Why didn't the ancient chineese and Native American's realize they were submerged under thousands of feet of water?

The "flood" if it happened at all, was local. To the people at the time the "world" was as far as the coastline.
