I need a recipe that I can make easily for a large group. This is for a pot luck dinner and I need something that still tastes good even if it is not hot. I am trying not to do the usual (potato salad, pasta salad, etc) since I do not want to bring the same thing that someone else might bring. Any suggestions???

Meatrolls are an easy thing to use.

Sliced roast beef
cream cheese
thin sliced tomato
Extra sharp chedder in strips


Lay down a slice of roast beef, add a thin layer of cream cheese and roll up a piece of chedder and tomato in it. Lay it seam side down. Other things you can add as you prefer: sweet walla walla or red onion strips or shaved, bell pepper, spicy peppers. You can also use sliced turkey or chicken instead of roast beef if you like.

It is getting winter, so why don't you bring a soup. Here is a delicious tomato and Basel soup

Ingredients
1 red onion, peeled and diced
6 garlic gloves, peeled and diced
olive oil
150ml/5fl oz water
12 plum tomatoes quartered
1 x 800g/1¾oz tin plum tomatoes
salt and freshly ground black pepper
half loaf of French bread
1 x 15g/½ packet fresh basil


Method
1. Heat about 3 tbsp of olive oil in a pan and cook the onion and garlic for a few minutes to soften them slightly.
2. Add the water and all the tomatoes. Cover with a lid, bring to the boil and season with salt and lots of pepper.
3. Dice the bread and stir it into the soup, along with the freshly ripped basil leaves. Place in a bowl, and drizzle with olive oil on the top.

How about a dessert? Bread Pudding with Raspberry Jam:
1 loaf brioche or challah
2 cups half-and-half
2 cups heavy cream
Pinch salt
1 vanilla bean, split lengthwise
6 eggs
1 cup granulated sugar
1/2 cup raspberry jam
Chocolate chips, as needed (optional)
Confectioner's sugar, for dusting

Equipment: 8 (3 to 4 1/2-ounce) ramekins; a cookie or biscuit cutter, the same diameter as your ramekins
Cut the crusts off the loaf of bread and slice into 1/2-inch thick slices. Use a cookie cutter to cut out rounds of bread that will fit snugly into your ramekins. (You can make additional rounds by cutting 1/2-moons around the edges of a slice of bread, then assembling them into whole rounds later.) Place the bread rounds in a baking dish or a sheet pan with sides. Cut any scraps into small cubes and reserve for another dish.

In a saucepan, heat the half-and-half, cream, salt, and vanilla bean over medium heat, stirring occasionally to make sure the mixture doesn't burn or stick to the bottom of the pan. When the cream mixture reaches a fast simmer (do not let it boil), turn off the heat. Set aside to infuse for 10 minutes.

In a large mixing bowl, whisk the eggs and sugar together. Whisking constantly, gradually add the hot cream mixture. Strain into a large bowl to smooth the mixture and remove the vanilla bean. Pour over the bread rounds and let them soak for 15 minutes, gently turning the bread over once.

Fill each ramekin with 1 soaked bread round. Spoon a tablespoon of jam into each ramekin, add some chocolate chips, if desired, then top off with a second bread round. If there is any remaining custard, pour it over the ramekins to top them off until they are almost full. Let soak in the refrigerator another 30 minutes.

Heat the oven to 350 degrees F.

Arrange the ramekins in a hot water bath. Bake until just set and very light golden brown on top, about 25 to 30 minutes. Dust with confectioners' sugar and return to the oven for 10 more minutes to caramelize slightly. Serve warm or chilled.

They really are very easy to make and alot of fun. I also use cookie cutters to make flowers out of slices of pineapple, and cantelope, use a strawberry or a grape for the center, or a melon ball

what about fried chicken ? that is good hot or cold , and will feed a group if you cook enough or maybe a 7 layer salad . If you want to do seven layer salad email me and I will give you the recipe . it is really easy to do . good luck .
