Does anyone have a recipe for teriyaki sauce that compares to the sauce they use at Sarku Japan on their chicken?
(Sarku Japan is a fast food place usually found in malls)

Teriyaki Glaze:
1 cup low-sodium soy sauce
1 cup grapefruit juice
1/4 cup hoisin sauce
1/4 cup ketchup
3 tablespoons rice vinegar
1/4 cup brown sugar
1 fresh red chile
2 garlic cloves, smashed
2-inch piece fresh ginger, whacked open with the flat side of a knife

In a pot, combine the soy sauce, grapefruit juice, hoisin sauce, ketchup, rice wine vinegar, brown sugar, chile, garlic, and ginger over medium heat. Bring to a slow simmer and cook, stirring, until thickened, about 20 minutes.

Never had Sarku but you might like this. Try infusing regular bottled teriyaki sauce (I like Kikkoman) with fresh grated ginger. Put about 1/2 bottle of sauce in a microwave safe bowl and grate in about two tablespoons of fresh ginger. Microwave until hot then remove and allow to cool, the ginger flavor compliments the taste of teriyaki very well. If you wish to save the sauce, strain out the ginger so it doesn't become too strong.

3/4 cup low sodium soy sauce, 2-3 large cloves of minced garlc, 3-4 tbl. Honey 2-3 ts. minced ginger, 1-2 ts sesame oil, 1/4 cup choped scallion ( or shallots). Mix well and enjoy. It will get better the longer it sits! Adjust it to your taste. I like to spice it up and add 3 tbl. of chipotle pepper tabasco.
