if you use marge(vegetable oil not dairy) rather than butter, you could make a pineapple upside down cake, or pretty much any sort of sponge you want
I'm afraid i dont really do meric for cooking, but you need
6oz flour
6oz marge
6ozsugar
3 eggs, beaten
cream the marge and sugar together then add the flour and eggs. Put in a tin and bake. For upsiide down cake, line the tin then put syrup with the fruit of your choice in before the cake mix. I usually use about a 500ml can on a roasting tin size dish.
Put in a oven preheated to approx gas mark 3 until brown and bouncy to the touch and when you put a skewer throught the cake it comes out clean
Always tasy, and can be eaten cold for many days after, usually served with custard, but doesnt have to be as long as you use enough syrup

If a recipe calls for cows' milk, you can use soy milk in the exact same proportion. Willow Run makes vegan margarine sticks that are excellent for baking. If you're serving rolls or potatoes with dinner, Earth Balance is an excellent vegan buttery spread.
You can buy soy ice cream--Purely Decadent and So Delicious by Turtle Mountain are the best. There's a nondairy (vegan) whipped "cream" called SoyaToo that I've seen at Trader Joe's.
Any vegan cookbook or vegan recipe website (www.vegweb.com) will have dairy-free recipes.
And when I was visiting my family last month, we went shopping at a local health food store, and my mom found a vegan apple pie in the freezer section. I'm sorry, but I can't remember the brand name.

Make a posh jelly - pretty easy but it looks really impressive.
You could make an alcoholic one - pick a cocktail and make it like that (I made a Caiprinha one at the weekend). Or make a fruit one, and put pieces of fruit into the jelly. You could even layer up different flavours (let the first one set before adding the second).
But if you do make jelly, make sure you make it about 24 hours in advance, because it normally takes longer than the stated 4 hours in recipes to set properly!

Soya ice cream such as 'tofutti' or 'swedish glace' with carob or caramel sauce topped with ground nuts and fruit
Voila! a delicious non-dairy sundae!
P.S. or you can make vegan cupcakes or muffins that taste the same, maybe even nicer, than dairy muffins. You can get lots of vegan ready-made desserts from health food stores, if you don't feel like cooking
oh, and vegaweb has many recipes for veggies/vegans

What about a nice fruit pie? Make the pastry with white Flora non dairy vegetable fat. Instead of the usual cream, serve with a contrasting fruit puree or coulis e.g. blackberry pie with apple puree.

Is this because your guests are lactose intolerant? If so, check with Whole Foods for their line of lactose free desserts, baked goods, pudding etc. Also, you can substitute Soy or Rice milk in recipes calling for dairy, or IMO for recipes calling for sour cream. Here are some thoughts:
1. Strawberry Granita: Puree 2 boxes frozen strawberries with 2 T lemon juice and 1 cup sugar. Add sparkling water and pour into a flat dish to place in the freezer. Every hour, scrape the frozen bits with a fork to form large crystals. Serve the granita in martini glasses garnished with fresh mint.
2. Apple Crisp: Slice 6 Granny Smith apples and toss with lemon juice, brown sugar, cinnamon and flour. Set aside. For topping, mix 1 cup oatmeal with 1/2 cup flour, 1/2 cup soy spread, 1 tsp cinnamon and 1/2 cup brown sugar. Place apple mixture in baking dish and top with spoonfuls of topping. Bake at 350 degrees for 1 hour or until apples are tender and top is crisp.
3. Lemon Bars: Take a look at Krusteaz lemon bar mix...that would be the fastest and easiest. However, if you want to make it from scratch, mix 1 cup flour with 1 cup sugar and 1/2 cup soy spread. Press into bottom of baking dish. Top with lemon curd (purchased in store) and bake for 30 minutes or until crust is golden (350 degrees).

what about cooking with soya milk, cream or margarine? You could make ice cream, or just plain fruit sorbets. Rice pudding is also feasible.
