Wash, cut per your choice, lightly coat with olive oil, season to taste, place in baking dish, and bake at 300* until tender. Cover the potatoes until the last 30 minutes or until halfway done, then uncover. Enjoy.

Boiling removes flavor from the potatoes.

I don't go through that much trouble. I just cut up my potatoes (i leave the skin because I like it that way) and add chopped onion and garlic then a bit of olive oil to that they are coated well.
If I want more "chrisp" I will do a quick fry on the stove top but isually just put the roasting pan in the oven. I don;t keep time, I just watch until they are the brown I like but 30 minutes sounds about right.

If you want to bake a potato, then cover the whole potato in oil and bake in the oven for about 30 minutes at 350 degrees.
If you want pan fried potatos, then you can peel the potatos, slice thinly and put into a greased pan over medium heat. I love to use bacon grease, even though it is really bad for you. The taste is out of this world. You can season with seasoned salt, pepper, garlic powder, or even add sliced onions and green bell peppers.
Hope this helps.

The best way that I have found is...do them in the Microwave. Be sure to take a fork and punch some holes in the potato before putting the spud inside.
Then set the timer to about 3 minutes, and after 3 minutes, check to see if it is done. If not, put back in the microwave and go another 30 seconds.
When done, slice down the middle and put in some pepper and butter...yummmyoooooo

I do them all the time. Red or yellow potatoes are nicest. Cut into pieces with skin on, put in glass dish with lid. Pour melted margarine or olive oil over; sprinkle with garlic salt, good pepper, and dried parsley. Toss all very well to coat the potatoes.

If you want creamier potatoes, cook in microwave, taking out frequently and tossing to coat. If you want them crisper, put on a baking dish and bake in the oven - 350 for about 40 minutes.
