One of my favorite picnic recipes is a sandwich that was on a Martha Stewart show years ago. The sandwich is great because it uses ciabatta bread which has a nice hard crust so it doesn't get soggy like regular sandwich bread. http://ca.lifestyle.yahoo.com/food-entertaining/articles/recipes/martha-stewart/channel1106
I would recommend brownies or blondies as opposed to cupcakes since frosting tends to melt. If you plan to spend lots of time outside, a mayonaise-y salad may not work. A good alternative is to do an Asian Style Cole Slaw using the brocolli slaw that is packaged in the grocery store. For the dressing instead of being mayo heavy, use a packet of ramen noodle seasoning mixed with rice vinegar or a white vinegar and canola or vegetable oil. Thats the base of your salad. You can also add defrosted frozen green peas, sliced red bell peppers, green onions/scallions or diced red onions. I also always add some sort of nut like sliced or slivered almonds, cashews, or sunflower seeds. Right before serving add the nuts and top with crumpled raamen noodles (yes, uncooked- they make a fabulous "crouton")

Can you grill at the picnic? That makes a difference and it makes it easy to just throw on some burgers and hot dogs.
Besides that, pick up some:
potato salad
cold pasta salad
chips (a few kinds)
lots of cans of soda (a cooler too - don't forget a few bags of ice)
bottled water
juice boxes if there are kids
baked beans
cole slaw
buns
fried chicken or buffalo wings (something to eat with hands)
a green salad (dressing too)
fruit salad and a donuts for dessert
You may want to make some side dishes and then get a few buckets of fried chicken and some ribs from a restaurant if you are not allowed to grill at the park.
Don't forget paper plates, cups, napkins, utensils and large serving spoons and a sharp knife because you never know

Take some specialty cheeses, meats, and crackers. I found some seafood pate in an import store that was absolutely delicious. Spreadable cheeses are great for picnics. Do a mix and match, it is soo good! Chilled lemonade or iced tea is always good. Fresh fruits and veggies are delicious and quick to prepare. For dessert, anything easy to transport and serve; no gooey cakes or anything like that. If you want a main course that is a little more prepped than cheese and crackers, try cold chicken wraps, finger foods that don't require heating, or small tacos--bring the ingrediants seperately and put together on site. I hope this gives you some good ideas!

Around here it could be take-out from the deli (sandwiches, fried chicken), a pasta salad, and a loaf of French bread or baguette, cheese, and balsamic vinegar. And a bottle of wine (or drink of choice). It's your picnic, make it your own! Just remember that hot stuff is harder because of the temps you'll be having. I'd go with anything that goes in an iced down cooler. Even with the chicken, who doesn't like cold fried chicken? And don't leave anything with mayo out too long. And don't forget the napkins and a trash bag! Have fun with it!
