Hi "D", yes I like beetroot, I like the freshly boiled kind, not the stuff you get in jars with vinegar! Have you tried "golden beetroot" it's just like the red but a lovely golden colour!

I couldn't stand it when I was a kid, but somehow I've developed quite a taste for it now. I guess it must be grown up food eh?

The best tasting beetroot though, is undoubtedly the stuff you've grown and cooked yourself. If you aren't able to grow your own, try to get some raw beets from your greengrocer.

All you have to do is cut off the root and the leafy head and then give the beets a quick rinse under a tap to get any soil or mud off. Then put them in some lightly salted water, bring to the boil, and gently boil them until you can insert a fork into them without too much resistance.

I can't say how long to boil them for as it depends very much on how large the beets are, but I think you should start to test them after about fifteen minutes. Just be careful not to overcook them as they are at their best while they are still quite firm.

Personally, I like to cook them with a few tablespoons of sugar also (especially the baby beets), as I think they taste better when a little sweet, but we all have slightly different taste, so experiment a little.

I certainly like the idea of cooking them with orange and Cinnamon as suggested elsewhere. I hope that tastes as good as it sounds.

My parents and grandparents always used to eat beetroots in vinegar, but I think they taste better without.

Bon appetite!

Great done in the oven roasted along with the rest of your veg. Like yams, carrots, courgettes, parsnips, and dont forget the potatoes.

Also good in a salad ,chopped up and added to mayonnaise, cooked as a soup, and puree'd cooked beetroot with 2 tbsp orange juice and a few pinches of spices (cinnamon, ginger, and cloves work well) for a colourful and low fat alternative to mashed potatoes.

I also have a FAB recipe for a dense, moist, flavoursome sweet beetroot cake. But ahh thats for another day!!

I love it as long as its not in vinegar. I went to a party once and they served beetroot salad. Its was basically fresh beetroot cooked and chopped then put into blackcurrant jelly with the zest of orangesand left to set. It was absolutely delicious served with cold cuts of meat.
