To prevent them from wilting. All plants that live above ground like lettuce and roses need a water source to keep looking fresh. The water spray hydrates the plant and keeps it lovely and crisp for your table. In the past this was accomplished with cool moist mats but they were found to be a safe harbor for bacteria - so the misting system keep the food fresh and cuts back on spoilage and food borne illness.

I used to work with veggies and and stuff back in the day. It's to make them look fresher and healthier than packaged veggies. Also the water helps them to stay cooler when they are wet and not turn color from the florescent lights in the supermarket.

Everything down the whole produce counter gets rained on. It keeps the items from drying out, lasting longer- but mostly it's done to look pretty so the consumer will purchase.

it is suppposed to keep them fresh and stop them from wilting.!!!!!!!
I find the stuff rots quickly and I don't buy anything sprayed anymore, all kinds of stuff could be sitting on the veggies and there could be fungus growing in the moisture......
