When I make certain dishes I top them with "Ortega diced green chiles". But I am wondering what type of chile is it? My latino friends cook frequently with different types of chiles (serrano, poblano,etc.). But all my life me & my family just buy Ortega green chiles. Am I showing my "whiteness"? LOL. Anyone out there know the answer? Thank you!!

Actually, I should have said that I am showing my lack of cooking knowledge ; ) Being white has nothing to do with it, lol. I just am still learning to cook -- sad but true ...

They are just green chilies. jalopenoes are a different kind of chile. so are serrano, poblano, habanero and so on. just plain green chilies in the can.

taking the seeds out of the chile will always make it milder

green chile are long and slender looking. great for making chile rellenos (stuffed with cheese and/or meat)

jalopenoes are hotter. i like to cut in half and deseed. stuff with cream chees, wrapp in bacon and bake in the oven @350 for 30 min or so or until the bacon is cooked.

serannos are hotter than jalopenos. i like to use them in salsa (finely diced) or in my famous football stew (email me if you would like recipe)

habnaroes are the hottest. i suggest you use VERY VERY little and WEAR gloves when handling. maybe do some research @ foodnetwork.com

there is a japanese pepper that is supposed to be hotter than the habanero. YIKES!!!!!!!!!!!!

Scramble some eggs, add the chiles (drained of course) and add some grated cheese. It's simple but good. Some toast on the side and your in business!

Dal Makhani ingredients: 1/2 cup whole ural dal (black lentils) 4 tbsp rajma (red kidney beans) 1 onion, chopped fine 1 tomato, chopped fine 2-3 cloves of garlic, chopped 1 tbsp ginger-garlic paste 1/2 tsp cumin seeds (jeera) 1 tsp garam masala 1/2 tsp red chilly powder 2 dried red chillies 2 tbsp milk 1 tbsp butter 1 tbsp oil salt How I Made It: 1. Heat oil in a pressure cooker and saute onions till transparent. Add salt, chilly powder and the ginger-garlic pasted and fry for a minute. 2. Next, add the chopped tomatoes and cook for a few minutes so that the mixture combines well together. Add the lentils and beans, and enough water to just cover them. Pressure cook for 3-4 whistles. Remove from fire and set aside. 3. Once the pressure leaves the cooker, keep it on a low fire. Add the milk and bring to boil. Keep it on sim and let it boil while preparing to temper it. 4. Heat the butter and oil in a pan and throw in the cumin seeds. Once they start spluttering, add the chopped garlic and the red chillies each torn into 3 pieces. Fry until the garlic starts browning and smelling lovely. 5. Remove the dal from fire and add the tempered butter-oil directly to it. Follow immediately with garam masala and mix well. Adjust salt. Serve with warm rotis, naan or pulao and your green chillis.

I just looked at a can. It says "roasted green chiles". I assume that means jalapenos which is the most common. They're just not as hot since they've been cooked down and canned.
