OMG: I can't believe no one said Maccau.
You have to Check out Maccau for at least one of the days. It's a quick hop on the hydrofoil and only takes like 2 hours for the round trip.

If you're feeling energetic:
Ride the longest outdoor escalator in the world up Mid-Levels, get off at the top, take a left turn and follow the road for 5 minutes until you see the turn off for The Peak. Hike up to the top, eat or do a bit of shopping once you're up there to kill time until it gets dark and then walk around the circuit to see all the buildings lit up from up high, or just drop by starbucks and enjoy the view over a frappuchino. Beautiful!
If you're feeling spiritual:
Man Mo temple is beautiful, centrally located and def. worth a visit! Light some incense and shake some yarrow sticks to tell your fortune.
If you're feeling hungry:
Take in a the Langham Hotel buffett - eat as much as you want including 2 chocolate fountains. Prepare to leave 'stuffed'!
If you're in need of a walk:
Take the ferry over to Lamma Island and mooch about - it's beautiful. Can hire a bike. Great seafood.
Make sure you take a harbour cruise at night the views are spectacular!
Get a foot massage at one of the many reflexology places!
Enjoy!

Go to Ocean Park and Disneyland for first timers. Actually Ocean Park will do and get to see the Floating Jumbo Palace and dress in the traditional Chinese costume for picture taking.
Go to Sogo (the remaining Japanese store) in Causeway and check on good bargains and if you have remaining time that day, walk around the vicinity- lots of small stores offering good stuffs. Go to Victoria Peak - enjoy the scenary, ride the tram.
It depends where you stay too - like are you in Hongkong side or Kowloon side. You can take the subway or ferry from both sides and train in HK side.

I am now trying on my 'diplomatic' robe!
Having had a look at your profile I find you are from Yorkshire?
The folk from Yorkshire, are the 'salt of the earth'! (in my humble opinion) they live in the North of England)
OK we have got that out of the way,
Hong Kong, is a few miles away from Yorkshire, I'm not at all sure what you really want to see?
I am completely different from you, I would want to know what difference has been made since the Chinese got it back from the Brits? Has it actually been
the horror story as predicted?
But as I say we are completely different you and I.
So if you ae a littlte 'confused 'about the spot on the map that is Yorkshire , I can only suggest you visit Disney world , etc!
Good luck with all that!

I wouldn't spend too much money on hotels. It would spend my money on food and shopping.
If you want to go to buy some cheap things go to flower street and lady street. You have to go to Mong kok for some of the best street food that you will ever find.
If you want to go buy some expensive things, go to causeway bay or either tsim tsa chiue.
then go to the mountain peak. And take the train up the mountain.
