A couple of months ago I got a Canon XTI with a Tamron 18-250 (35 equiv. 28-400) f/3.5 Macro zoom, it is an awesome zoom that covers just about every thing for a one lens does all, for my Portrait work I use a Canon EF 50 f/1.4 (35 Equiv. 80).
The Tamron is about $500 and The Canon is about $310, try www.bhphotovideo.com Great prices, Professional staff, demos and reviews. I have been a happy customer for more then 25 years now and last of all, they also offer NEW and USED equipment.

Get the XTI kit with the kit lens, that's an 18-55 lens and will serve you well enough for mountain outdoor photos- just be sure to stop the lens down to about f/8 or f/11, that's the sweet spot for sharpness with that lens. Then, in addition, get either the 50mm f/1.8 ($80) or 85mm f/1.8 ($340) for portraits of people. Prime lenses are great for portraits albeit less flexible than a zoom. Either of those two primes can do double duty as low light lenses as well.

The kit lens is a great start. It's not the best lens in the world but it's surprisingly good once you set the lens on f8-9 - perfect for outdoor and panoramic shoots because it's bright outside anyway and its wide angle is pretty useful.
I too have the 28-200 USM and find it very useful, but I still use the kit lens from time to time.
I also have a 50mm f1.8 prime lens - cheap but good. This one is great for portraits - big aperture and very sharp. Construction quality is a little bit doubtful because it's made of plastic but for $70 or so this is pretty much a bargain.

The question is: Do you want to improve your photography skills? If you do, I suggest you keep the camera, take it out w/your point and shoot. Take your time when you want to take the picture. Go to photo websites and post your pictures for criticism and critics. Don't take the remarks personally and try out the suggestions and pointers. Go back and take the same image, but with the new advice and compare the new and old images. If you don't want to keep the camera and will be happy with just the point and shoot, sell the XTI.

Any camera will take great pictures if a great photographer is using it. Take a lot of photos and throw away all but the best.
You will probably want to start with a basit 18 - 45 mm lens and get a bigger zoom to go with it.

consider on the Canon EF 28-200 lens which that's my all around lens that I've been using.
