Two ways and it really depends on what you plan to do with them later.

1. Cut them in half, take the pit out, stick them in a zip-lock bag and put them in the freezer. I wouldn't slice them until you thaw them out and are ready to use them. They will maintain a better texture if they are in big pieces.

2. Make a small "X" in the bottom of the peach and drop them into boiling water for about 30-60 seconds. Then take them out and let them cool a little. When the peaches are still warm, peel them using the corners of the "X" you made in the bottom. The skin should come off fairly easily in 4 pieces. Cut them in half and take the pit out. This method can be sliced before putting them in a zip-lock since they are already partially cooked.

The best way is to peel and slice them(make sure they are ripe but firm), toss them with Fruit Fresh or ascorbic acid, and use a vaccum food saver. I would say 6 months would be the max before they start to lose flavor and quality. Most fresh fruit is good for 8-12 months if prepared and stored properly.

Cut them open remove the pit. Lay them flat on a cookie sheet and palce them in the freezer. When they are frozen put them in a ziplock type bag and mark the date on the bag. I

If you are freezing them for a pie cut them in slices and place them in a pie shell. Then when you are ready to bake it, just slide it into the crust and top it. Make sure you use the same size pie pan for both steps.
