PASTA ALFREDO
1/2 lb. egg noodles, cooked al dente
1/4 c. part-skim ricotta cheese
1/4 c. non-fat yogurt
1/4 c. freshly grated Parmegiano
1 tbsp. olive oil
Salt & freshly ground pepper
When the pasta is cooked to taste, drain and return to the pot. Add the remaining ingredients, seasoning to taste with salt and pepper. Toss well to mix. Serves: 2.
VARIATIONS:
PASTA ALFREDO WITH MUSHROOMS: Heat the oil in a heavy skillet and saute 1 1/2 cups sliced mushrooms for 3 to 5 minutes. Toss with the pasta and the remaining ingredients.
PASTA ALFREDO WITH ONIONS AND GARLIC: Heat the oil in a heavy skillet and saute 1 large onion, sliced and 1 large garlic clove, minced until the onion is soft, about 5 minutes. Toss with the pasta and the remaining ingredients.
ALFREDO SAUCE - PASTA
4 oz. cream cheese
1/2 stick butter
1/4 c. Parmesan cheese
1/4 c. milk
Garlic to taste
Soften cream cheese and butter. Add cheese and milk and garlic over low heat. Serve over 8 ounces cooked thin spaghetti noodles.
Serves 3.

Here is a good quick Al Fredo recipe. I've never added broccoli, but I don't see why you can't.
I second the comment about bottled al fredo sauce, it is positively VILE!!!!

1 - 8 oz. package Cream Cheese
¾ Cup (3 oz.) Grated Parmesan Cheese
½ Cup Margarine or Butter
½ Cup Milk
8 oz. Fettuccini, cooked and drained
In a large saucepan, stir together cream cheese, Parmesan cheese, margarine, and milk over low heat until smooth.
Add Fettuccini; toss lightly
4- servings.
(As a variation, before making the sauce, cut up boneless chicken, pork or beef into bite-sized portions. Season the meat with salt and pepper, sauté in butter or olive oil until done. Remove from heat, and make sauce. Just before adding the Fettuccini, add the meat to the sauce and stir well. Editor)

if you want the EASIEST pasta ever with a creamy sauce - cook pasta til al dente (still a little firm) . add slow fried red onions, mushrooms fried in butter, small pot of double cream, clove of minced garlic and plenty of flat leaf parsley. for the best taste use fresh pasta. this is so yummy, i just hope you're not on a diet!

Alfredo is good but dont buy it from the grocery store in a jar...Gross! I would find a good recipe on how to make it from scratch. It will be much better then.
