I second the suggestions for Peach Cobbler or Peach Pie!
Here is my wife's cobbler recipe. You can use it with peaches of apples.

Peach (or Apple) Cobbler
2-cup flour
¾ teaspoon salt
3-tablespoon sugar
¼ cup shortening
¾ cup whipping cream
8 cups sliced fresh peaches or apples
2 cups sugar, plus more for sprinkling
2 tablespoons flour
½ teaspoon cinnamon
1-teaspoon vanilla
1/3-cup butter
Combine first 4 ingredients; cut in shortening until mixture resembles course meal. Sprinkle cream over mixture and toss with fork until dough forms a ball. Knead 4 or 5 times; wrap in plastic wrap. Chill at least 1 hour. Meanwhile combine fruit, 2 cups sugar, flour and cinnamon in Dutch oven; set aside until syrup forms. Bring to a boil; reduce heat and simmer uncovered 10 minutes or until tender. Remove from hear, stir in vanilla and butter. Preheat over to 475 degrees. Roll ½ of dough into 12” x 8” x 2” rectangle. Spoon ½ fruit into lightly buttered 12” x 8” x 2” dish. Place pastry on top. Sprinkle with a little sugar. Bake 15 minutes or until lightly browned. Spoon remaining fruit on top. Roll remaining dough 1/8” thick. Cut 1” strips top lattice style. Sprinkle sugar. Bake 20 minutes or until brown.

I just noticed you have canned peaches rather than fresh. Here is a recipe using canned peaches.
Peach Cobbler
Bert Kaufman, aka Tinker
2 c. flour
1½ c. white sugar
½ c. brown sugar
¾ c. milk
3 tsp. baking powder
¼ tsp. salt
1 large can sliced peaches in heavy syrup
2 sticks (¼ pound each) margarine
Combine 1 cup of the flour, 1 cup of the white sugar, the milk, baking powder and salt with half the liquid from the peaches. Melt half a stick of the margarine and add it to the batter, and stir. Melt half a stick of the margarine in the baking pan or dish. Pour the batter into the pan, over the melted margarine. Add the peaches. Sprinkle with sugar and cinnamon to taste.
Bake at 350 degrees F. for 30 minutes. While it is baking, make the streusel topping. Melt the remaining stick of margarine and mix with the 1/2 cup of white sugar, 1/2 cup of brown sugar, and 1 cup of flour. The topping should be crumbly. After the cobbler has baked for 30 minutes, add the streusel topping and bake for an additional 15 to 30 minutes.

Peach Melba: poached peaches with vanilla ice cream and raspberry sauce
Pronounced: pesh / mehl ba
INGREDIENTS:
* 2 cups water
* 1 cup sugar
* 1 vanilla bean, cut in half lengthwise
* 3 peaches, preferably freestone
* For the raspberry sauce:
* 8 oz. raspberries
* 1 Tablespoon lemon juice
* 2 Tablespoons sugar
* 3 Tablespoons raspberry liqueur
* To serve with:
* vanilla ice cream
* mint leaves
* 18 whole raspberries
PREPARATION:
In a saucepan or stovetop casserole large enough to hold the 6 peach halves in one layer, pour in the water, sugar and vanilla bean. Bring to a boil over medium heat, stirring occasionally until the sugar is completely dissolved.
Cut the peaches in two and remove the pits.
Add the peach halves to the sugar syrup, cut side down. Add additional water if needed to completely cover the peaches and poach them for 10-15 minutes. Remove the pan from the stove and allow the peaches to cool in the syrup.
When they are cool, remove from the syrup (which may be kept for another use) and slip off the skins. Drain well on paper towels. Cover them and place in the refrigerator to chill.
Place the raspberries, lemon juice and sugar into a food processor and process for about 1 minute. Pour the mixture through a strainer, pressing the juice through. Mix the raspberry liqueur into the raspberry purée and place in the refrigerator to chill.
To serve:
Divide the peach halves among 6 dessert plates, cut side up. Place a scoop of vanilla on each half and drizzle with the raspberry syrup. Decorate the plates with a few mint leaves and 3 raspberries each.

Start with making a basic recipie for biscuits, below.
2 cups flour
4 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons butter
2 tablespoons shortening
1 cup buttermilk, chilled
Preheat oven to 450 degrees.
In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.
Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times.
2 Cans of Peaches
Butter
Cinnamon- 1 tsp.
Take your peaches and drain them. Place them in a frying pan with cinnamon and about a tsp. of butter. When they are done, they will be stewed consistency.
Take the dough and press about two Tbs. of it into the bottom of a greased muffin tin. Bake for about 5 min. Take out of oven and spoon the peaches on top and bake for a remaining 10 minutes.
When you take them out, they will be messy, but taste great!

Place the peaches in a shallow baking dish and sprinkle with sugar and cinnamon.
Bake until warm and the sugar has begun to caramelize. You can do this stove top also, but you have to watch it doesn;t burn. Its great over ice cream. If you have a bit of brandy or rum you can put some in the baking dish while they are cooking for a more mature flavor.
