...and I'm not a fan of cooking nor am I very creative in the kitchen! Any quick and easy but YUMMY ideas?

sounds like a "POT LUCK" try this
1 can ranch style beans
1 can chili
1 10 pk premade burittos
1 pkg shredded cheese

put the chili on the bottom of a disposable baking dish
arrange the burittos over it add the ranch style beans and cheese to over and bake for 30 minutes cover with tin foil and take it with ya for serving it you can cut each buritto in half and serve it with sour cream and salsa.. good luck

Taco salad is a HUGE favorite. Cook a pound of hamburger as for tacos with the seasoning and chill. Make salad with lettuce, tomato, green pepper, black olives, and the chilled meat. When time to serve, add crushed Doritos and a dressing of 2 parts italian and 1 part french or russian - toss. Yummy!

When I am pressed for time, or don't feel like cooking, I buy Lipton Vegtable soup mix, and the recepie for Spinich Dip is right there on the box. I also pickup some crackers.
Cooking and drainging the spinich, then mixing the sour cream and mayo with the packets in a large bowl, that's the hard part.
If you have a good tray for crackers, you can setup the display ahead of time, otherwise you setup your crackers when you arrive

Just go to the Deli/Bakery section of the local Wal-Mart Supercenter, Publix, Kroger, or another large chain grocery store, and ask for a quart of some ready-made side dish like cole slaw, potato salad, or something else.

why not make some chicken wings and provide a few sauces for people to take, chicken wings can be served hot or cold and everyone loves them.
or go to a deli and order up some of their spinach dip or a veggie platter or a deli tray and pick up some fresh buns. No cooking involved and no mess to clean up.

A covered dish can be almost anything, not just casseroles. How about a nice accompaning salad? Buy fresh pre-bagged lettuces, some tomatoes, etc. and a selection of dressings.

Kittencal's Famous Greek Salad (Recipezaar #66596-has 126 ratings)
8 servings 1 1/2 cups
10 min 10 min prep

1 cup olive oil
2 tablespoons fresh lemon juice
1 tablespoon dried oregano
2 teaspoons fresh minced garlic (or to taste)
1/2 tablespoon dried basil
salt and pepper
3 tablespoons red wine vinegar
2-3 tablespoons parmesan cheese
1-2 teaspoon sugar (optional)
FOR SALAD
2 romaine lettuce, chopped
2 large tomatoes, cut in wedges
1 large cucumber, julienned
1 red onion, cut in slices
1/2 lb feta cheese, crumbled
1 cup Greek olives or regular black olives
black pepper

In a processor, process the oil, lemon juice, oregano, salt, and pepper, garlic, basil, vinegar and Parmesan cheese until smooth, adjusting ALL ingredients to suit taste.
**NOTE** if you find the dressing too strong, add in 1-2 teaspoons sugar.
Chill in fridge for a couple of hours before using to blend flavors.
Prepare salad ingredients in a large bowl. Pour dressing over and enjoy!

And if you don't mind a little baking...I do this one in a 10x14 pan even though she recommends a 9x13.

Virginia's Perfect Chocolate Brownies (Recipezaar #15072-has 141 ratings at last count)
28 servings 28 brownies
40 min 10 min prep

3/4 cup cocoa powder
3/4 cup shortening
2 1/4 cups sugar
4 large eggs
1 teaspoon vanilla
1 1/4 cups flour
1 teaspoon baking powder
1 teaspoon salt
1 cup chopped walnuts or pecans

Preheat oven to 350 degrees.
Grease a 9x13" pan.
Melt shortening in a large saucepan over low heat, then stir in cocoa.
Remove from heat.
Mix in sugar and vanilla then mix in eggs one at a time.
Stir in remaining ingredients then stir in nuts.
Bake for 30 minutes.
Cool completely, before cutting into 2x2" squares.
I have read all the great reviews and learned from them, thank you all. Now I line my pan with buttered alumunin foil or parchment paper. This works very well.

Well thats easy just bring Soda. Then again you can try and pass off KFC as some thing you made. Then again you could just bring already made potato salad

baked mostaccoli is always good. just cook the noodles, buy a jar of sauce & combine in a baking dish, then add a bunch of mozzarela on top & put in the oven until it's bubbly on top. easy & everyone will like it!

look up 7 layer salad. you dont have to cook anything, and everyone loves it.
