Where abouts in NJ and when?
Trips to Philly and NYC are nice if you want a more city atmosphere.
The theater district in New Brunswick (Central NJ) is really starting to take off, and has broadway like shows for a smaller price tag.
Take in a sports game - Devils, Nets, Jets and Giants all call NJ home. But don't underestimate the smaller farm teams too.
There are a number of wineraries in southern NJ, who do taste tours.
The leaves could start changing soon, and a great place to view them is throughout the northern part of the state.
Of course, there is Atlantic City.

Atlantic City. And there are some good restaurants off of the Boardwalk to celebrate at. Also some cheaper hotels off of the boardwalk. Get up early and rent bikes at 6 AM and ride up and down the boardwalk. Go swimming in the ocean. Take in the shows.
You can also get tickets for the concert center in Holmdel Park in Monmouth County or go to Fornos in Newark for dinner

Atlanitc City .. The jersey Shore is great for a party weekend out.. Seaside. Wildwood.

Depends where in NJ you are going to be. The shore is always a good choice. If you're up north, hang out in Hoboken.
