Put red food coloring in a cake mix, or icing and make it pink - you could make cupcakes even.

I'm not sure how appetizing it is to have EVERYTHING pink, but its for a great cause. Here are some ideas:
1. Goat cheese mixed with softened cream cheese and a dash of red food coloring
2. Pink Grapefruit juice cocktails
3. Strawberries and cream filled white cake
4. Strawberry cake
5. Fresh beet and goat cheese salad

Your basic cake doughs would work with food coloring, or yogurt with food coloring.
You can try to glaze meats that are not cooked heavily, (roast chicken, or any white pork, possibly veal, but no beef).
The glaze would be either whole eggs or just yolks, beaten and heavily colored with food coloring. Brush the mixture on about 2 minutes before taking the item out of the oven or out of whatever, so you bring the eggs up to a safe temperature. Basically, the same concept as an egg wash on breads.
Steamship round would work as well, it is very pink except for the outside when cooked properly. Maybe a strawberry based salsa, or even light colored tomato salsa on top of a meat portion.

Pink Applesauce is always good. Just use cinnamon imperials or red hots for your cinnamon and sugar. This even works with jarred applesauce - heat the sauce and then drop in a few of the cinnamon imperials so they'll melt. A pretty color as well as wonderful flavor. Or sauteed apples using the red hots for the cinnamon and sugar.
Pink Lemonade - if you don't want the raspberry lemonade already suggested.
Cream cheese with strawberries comes out pink. Use it to stuff celery sticks or on crackers/bagels.
Pink frosting is an obvious choice for lots of desserts.
A vodka or bolognese sauce isn't as red as spaghetti sauce.

Those red corn tortilla chips (I think that's what they are, and they're close to pink?) with some bean dip Pink lemonade or strawberry iced tea, or the tea with umbrellas sounds yummy Chocolate cake or cupcakes with pink frosting, or even a cheesecake because those come in plenty of colors depending on what's them :) Strawberry ice cream :) yummm Ok I have to stop cause I'm pregnant with my second child and I'm getting cravings now LOL.

One of my favorite pink foods is angel food cake with pink whipped cream frosting. Make the cake, get some really good whipping cream, and when whipping the cream add a touch of red food coloring. It's pink and delicious. A note: when whipping the cream, whip it stiffer than you would for other recipes, but use caution not to whip so much it starts to get the texture/graininess of butter.

Food can be put in baskets with pink linen cloths
Vanilla pudding can be made pink and then strawberries added to it makes it more pink
