Is it true that it doesn't matter how much fat or sodium you eat in a day and that you'll lose weight just as long as you burn more than you eat?

yes - its true - weight loss is all about calories in vs calories out.
excess intake of sodium will make you retain water but it will not influence the fat loss process.
fat intake - the same - all you eat is being converted into energy inside your body and only if not spent is gona be stored in fat reserves. (of course you should be making healthy food choices to make sure your body gets all the nutrients and vitamins it needs)

yes..If you burn more calories than you eat you will lose weight ..period.
You might have heard of a fad diet that made the rounds a couple of years ago that told people could eat all the protein they wanted, including , butter, cream, whole eggs, hi fat deli meats and fatty red meats and still lose weight. Well it did actually work...for a while. Sadly you can't live on this kind of diet for more than a short period. Even the book said no more than 14 days at a time.Those who lost a little water weight realized that they gained back all they had lost plus about 20 % more weight. So you can lose weight on just fats and proteins but it's not healthy and doesn't last.As for sodium...That's another word for salt. Salt is no good for your kidneys or blood pressure and can cause water retention. It should be avoided at all times. The average person gets about 300 time the daily recommended amount in their diet anyway... Good luck

no its not true..salt (sodium) retains water, so its actually better if you have little or no salt at all.. so the less salt you have, the more weight you'll loose...hope this helps and good luck!
