What are some fire hazards and things to know in a kitchen? Some that I can think of is pouring baking soda on small fires =D and opening pot lids away from you so the steam doesn't blow in your face causing burns.

Do not pour water on a grease fire.
If a fire starts in a pot or pan, cover it with a lid.
Do no leave a dry pot or pan cooking on the stove.
Keep paper towels, pot holders, towels, etc. away from the open flames.
Do not leave utensils cooking in the pot as they can melt, or burn you if you pick them up.
Do not leave any pot or pan unattended while the heat is on.
Do not overheat nonstick pans.
Watch for splatter when cooking things in oil.
When draining pasta or vegetables in the sink, hold the pot away from your face.
Do not let pot handles overhang the stove to prevent accidental knocking over of the pot.
Use a pan sturdy enough for the food especially when making turkeys and roasts so they do not collapse onto your feet.
Use trivets or cutting boards on countertops to prevent damage from hot pots and pans.

Make sure to use plenty of ventilation and have a working smoke detector!

Might not be a Fire hazard, but it can definitely be a kitchen hazard - use pot holders when taking things out of the oven and make sure the door is fully open or it could close on your arm(s). [Have you noticed a lot of the cooks on Food Network use towels instead of pot holders? - that bugs me because part of the towel could get in the flame, etc.]

You should definitely keep a small fire extinguisher in a nearby cupboard.

And, if you're too tired to cook - order out.

When frying with oil or grease, make sure the level is 2" from the top of the pan or more. (When you have the items to fry in the pan with the grease or oil.)
