u can do it either way. both definitely make the cheese cake taste right. but, whenever i baked cheese cake, i will leave it to cool in room temp, then, if i want to store it i will keep it in the fridge. it will get cold and taste better in hot whether. by the way, if u want to frost the cheese cake (with icing or decorate it), u should leave in the fridge

Leave it on the counter. In a couple hours you'll wake up and worry about it. You won't be able to go back to sleep until you get up and put it in the fridge.

i think you should leave it out but cover it w/ seran wrap or aluminum foil so that it cools down b/c i put a warm-hot cake in the fridge and the next morning the whole top part of the cake was wet and looked 'dewey' on top

You need to start cooking earlier so you have time to properly cool your food down or you are going to get sick. even in the fridge it needs to be able to cool down to 70 degrees in the first 2 hours and down to 41 or less in the next 4 hours. and if it is a food that gets reheated be sure to reheat to the proper temp to kill bacteria also.

Same thing, let it cool off. Put it some place where it is not hot/warm and then put it in the fridge.
