On chocolate cupcakes, I like to use a mint buttercream.
1/2 cup unsalted butter and 1/2 cup solid shortening. cream together and add 2 tsp. of mint extract.
Add 4 cups of confectioners sugar 1 cup at a time. Then add a few tablespoons of milk to desired consistency.
I then like to color it light green. Sprinkle chopped Andes mints on top.

To Die For Chocolate Icing

1 C Sugar
1 C Heavy Cream
Heat in saucepan til bubbly (stirring constantly) for 7 minutes.

Add 4 squares Unsweetened Chocolate
1 Stick Butter
1 Tbsp Vanilla

Cool. Put in refrigerator for 30 minutes and then whip until smooth.

Very rich and delicious!!

I just get a store bought can of Icing/Frosting (Duncan Hines) and empty it into a medium bowl. Add a generous teaspoon of vanilla extract to that and stir well. Then apply the Icing to the cup cakes or cake. You can add some freshly grated orange rind to the white Icing. For chocolate Icing, add a coupla teaspoons of strong coffee or Kahlua. Saves a lot of time and tastes just fine.

RECIPE INGREDIENTS:

1. Heat the oven to 375 and line a 24-cup mini muffin pan with paper baking cups.

2. Sift together the first four muffin ingredients in a medium bowl, then stir in the chocolate chips.

3. In a separate bowl, whisk the egg until frothy. Blend in the milk, sour cream, butter, and vanilla extract.

4. Make a well in the dry ingredients and pour the liquid mixture into it. Stir just until they're uniformly blended.

5. Divide the batter among the muffin cups, filling them to the top. Bake the muffins on the center oven rack for 17 minutes (the tops may brown slightly). Remove the muffins from the oven and let them cool in the pan on a wire rack.

6. To make the icing, use a wooden spoon to cream together the butter and confectioners' sugar in a medium bowl. Blend in the mint extract and milk until smooth.

7. Remove the cooled muffins from the pan and frost them. Use the cake-decorating gel to add red stripes, as shown.

M&M's candies
Black decorators' gel frosting
Pretzels
Red shoestring licorice
1. To make one, first frost a cooled cupcake (baked from your favorite recipe) with chocolate frosting.

2. Unwrap a round, red lollipop (we used a Blow Pop), trim the stem slightly, and stick it into the center of the cupcake for Rudolph's very shiny nose.

3. For eyes, set 2 M&M's candies in place, then dot them with black decorators' gel frosting. Carefully break large thin pretzels into antler shapes (this may take some practice!) and insert them into the top of the cupcake. Finally, add a short piece of red shoestring licorice for a mouth.

EASY NON-COOKING CHOCOLATE ICING

1 1/2 c. confectioners' sugar
3 tbsp. oil
3 tbsp. cocoa powder
3 tbsp. water

Mix well by hand with a fork and frost cupcakes immediately

I like white or yellow cupcakes with white frosting (all store bought) with coconut mixed in the frosting.
