I am tired of eating chicken, and ground meat, don't want to cook fish. At the market ground turkey is $1 for a package, chicken about $3 for three leg and thigh quarters, and talapia fish is about $1 for two in a pack.

I want some advice on a quick and cheap meal to cook that will last me atleast 2 days.

How about Spaghetti Marinara.
Just buy a jar of ready made marinara and heat it up.
Boil spaghetti noodles, then drain.
Serve the marinara on top of the spaghetti with Parmesan Cheese.
I know it's meatless but sometimes pasta and plain sauce are really good just for something different.
If you don't like marinara or are just plain tired of spaghetti noodles, buy an alfredo sauce and some penne pasta.
You will probably have enough money to make garlic bread too.

I would get a cheaper cut of beef (like round steak) and cut it into cubes and brown it in a little hot oil. Add salt and pepper and about 3 cups of water and simmer it very slowly for a couple of hours. Once it's tender, you have a great base for a soup or stew. By adding canned tomatoes, potatoes, carrots and onions you have a meal for several days. To make a stew, use only carrots, potatoes and onions and add a little flour to thicken. All these ingredients are inexpensive and should make a meal that will last 3-4 days.

Cheap Cheap - Make some Macaroni and cheese for dinner, refrigerate the leftovers and make a salad out of it the next day by adding diced celery, diced onions, and a little leftover chicken or whatever kind of meat you would like to use. Very good. You could even use a can of Tuna fish. Can't get any cheaper than that. My son - when he first went to live on his own - lived on Mac and Cheese and Tuna Fish.

Stuffed turkey thighs. Two of them would easily get you through 2 if not 3 days. One package runs about $3.00. Then just make a stuffing or prepare stove top and stuff under skin of thigh. Cook about 1 hour unstuffed; 1.5 stuffed. Really good; really filling. It's like Thanksgiving without overeating!

make a big pot of pinto beans! this will make several servings and is super cheap.

rinse beans and soak overnight. drain off the water, put beans in a pot and cover with fresh water. bring to a boil and simmer for 1-2 hours or until tender.

in the meantime, saute a chopped onion, a clove of garlic, and some peppers (jalapeno, poblano, whatever you like) in some butter and add to the beans. when the beans are tender, throw in a can of diced tomatoes and some chopped cilantro. season with salt and pepper to taste. simmer a little longer to allow flavors to blend.

serve with fresh cornbread (the box mixes are 4 for $1).

use the ground turkey and make a turkey chili...or you could go to the butcher ask for a small chuck roast...2 lbs or so...check the price per pound....braise in lipton onion soup mix and water... thicken with a slurry of corstarch and water...serve with mashed spuds..or egg noodles...to extend...serve over buttered toast...or add carrot and peas and potatoes...mock stew...
