Catholics have been casting out demons ever since Jesus and the Apostles did it.
Modern psychology says that most of the people who had demons cast out of them were probably miraculously cured from schizophrenia and other mental illnesses. But their cures were still miracles.
The Catholic Church believes that real demonic possessions are rare but possible, so they keep a few exorcists around just in case.
The Church has guidelines in place to take great care to exhaust psychological options before calling in an exorcist.

I think people truly believe in exorcism due to their own experiences with negative emotions. They know, consciously or not, that they've rejected or healed their own anger, hate, rage, despair or simple bad habits. Combine that with a set of religious beliefs and some people believe religion can eradicate negative feelings.
Not all religions perform exorcisms to cast out demonic possessions. Some perform them to cast out unacceptable behavior which they believe to be a product of evil rather than a character flaw or something else.

Exorcism has roots in the bible with Jesus exorcising demons.

Because the body has an entergy field. Entergy cannot be created or destroyed it can be played with. Spirit entergy can effect the living because of this.
