To be precise, Ess' ich? = Esse ich? meaning Do I eat? or Am I eating? There is also the word Essig 'vinegar', which souds the same.

The german word 'ich' is the personal pronoun of the first person singular. The english equivalent is 'I' or 'me'.
I don't really understand the last part of your question. 'Es ich' is not a correct german expression. These are just two personal pronouns put together. The word 'es' is the pronoun of the third person singular, in english 'it'.
In german 'es ich' sounds very similar to 'ess ich' which means 'I eat it'.
