freeze your quiche AFTER you bake it. The crust will be fine as long as you defrost it in the refrigerator. The egg will be fine, also. Do not freeze it first, you will have a mess on your hands. Make sure to cook it all the way through. I freeze them all the time when I'm doing large catering functions.

Freeze the quiche after it is baked.

Pre-bake your pastry case and brush with egg white before you put your mixture into the case. Cook it , then freeze, and you will find that it will not go soggy. Quiche can also be eaten cold you know, just thaw out and eat.

Actually, I worked at a bakery that made quiches. The best way to do it is to prepare your crust, add all the fillings, but then freeze it before adding the egg/cream mixture, which is pretty quick and easy to whip up at the last minute right before you pop it in the oven.
We also froze them uncooked with the egg mixture and never had any problems or sogginess. The only hard bit is getting it frozen without spilling egg all through the freezer!

You can only freeze it after. Cook it under by about 5 minutes, that way when you heat it up it won't over cook.
