Baked tilapia and roasted baby potatoes. I season the tilapia and coat it with a little mayo and olive oil, and bake for 10 minutes. When it's done, you can sprinkle lemon juice on top for taste. The baby potatoes I slice into wedges, and cover them garlic powder, rosemary, salt, and pepper, a little bit of olive oil and then bake covered with foil for 20 minutes. After that, uncover the foil, sprinkle some fresh chopped garlic on them, and bake another 20 minutes. Just came up with this idea last week, and it came out delicious!!!

I've had a craving for Mexican food all day, I was planning on making some chicken tacos with some grilled vegetables. Instead plans fell through and I ended up with Taco Bell's newest creation a Beefy Cheesy Melt thinger. It was ok, but a far cry from what I could have had.

To make up for it I'm doing plenty of drinking tonight!! :)

I am making herb roasted chicken.. I start with a whole baking chicken and make 1/2 cup of margarine and 1/2 tsp each of rosemary, thyme, salt and pepper and 1/4 tsp of lemon juice melted and stirred togeteher. i baste it all over the chicken, and bake it in a 400 degree oven for 2 hours, basting every 30 minutes. I also add a 1/2 can of chicken stock to the bottom of the pan after basting the chicken and it makes wonderful fixins for gravy... our sides are mashed potatos, mac and cheese, corn and jalapeno black eyed peas...

i had a veg balti!!

get some chopped potatoes and lazy garlic add some water put into a dish cling film n stick in microwave

next prepare some veg: broccoli, baby sweetcorn, carrots wait til potatoes have cooked a bit then add these to them in the microwave

then chop un onion, pepper, mushrooms and vine tomatoes.

add it all into a dish suitable for oven add herbs or wotever put some balti sauce in and put in oven for an hour (put tin foil over top so it doesnt dry out).

It's gorgeous!! i just eat it with no rice maybe with sour cream n chive sauce!

Oven Fried Chicken
1 tablespoon butter
2/3 cup all-purpose flour
1 1/2 teaspoons paprika
1 1/4 teaspoons salt
1/4 teaspoon pepper
3 to 3 1/2 pounds chicken pieces



Heat oven to 425°. Put butter in a 13x9x2-inch baking pan; place the pan in the oven to melt butter.
Meanwhile, mix flour, paprika, salt, and pepper. Coat chicken pieces with the dry mixture; place skin sides down in hot melted butter in baking pan.

Bake chicken, uncovered, for 35 minutes; turn chicken pieces. Bake for about 15 to 20 minutes longer, or until juices run clear from thickest pieces. Oven fried chicken serves 4 to 6.

Im having Fish , fruit salad and wheat bread, the kids are having baked chicken, mac n cheese, cuke, carrot and celery salad, and dad is having fried chicken breast and french fries
recipe for my mac n cheese

pasta( cook per directions)
mozzerella cheese, and velveeta
1/2 stick butter
salt, garlic powder and pepper to taste
2 tblspn of tomatoe paste
1/2 cup milk
parmesan
after pasta is cooked let the butter melt on it, stir it
warm milk and tomatoe paste in a pan, stir til paste is smooth and blended in with milk and seasoning
put 1/2 mac in a oven pan, sprinkle with cheese
put other 1/2 mac on top sprinkle more cheese
pour milk mixture evenly
hen sprinkle grated parm on top, oven on 350 bake until golden brown.... to kick it up a nothch and for a one pot dish and cut up seasoned chicken breast

I put a beef roast in the crockpot. I put a little water and chopped onion on the bottom. I coated the roast with garlic powder, salt and pepper real good. I placed the roast in the crock pot and put it on low for 11 hours. When I came home from work, I walked into a home cooked meal and it smelled DELI-SH... I made mashed sweet potatoes and corn. The water and onions made a nice gravy for the roast. It just melted in your mouth...seriously!

I fixed a half beef tenderloin with a dry rub and mashed potatoes. Creamed peas for veggie and chocolate pudding as dessert. Easy and yummy.

Enchilladas. I didn't make it from scratch though, it was a jar of enchillada sauce, a pack of wraps and I cooked the (proper) chicken fillets in the oven before cutting them up and throwing it all together.

Tostadas.....
Fry up tortillas in skillet with oil until light golden brown,top with refried beans,cooked ground beef,shredded cheese,lettuce shredded,chopped onions & green chilies,(optional),diced tomatoes,salsa & sour cream...yummy!>=)
