I just bought some eggplant and most of the recipes I have found online require breadcrumbs, but i didn't buy any. Does anyone have a good eggplant recipe? I'm a little low on groceries, so I don't have a lot to go with it. I don't care how it's prepared, I just want a good eggplant dish of some sort! Thank you!

You could peel it and fry it in a little oil and add a jar of spagetti sauce and serve over pasta

Here's a few simple recipes:

EASY EGGPLANT

Eggplant, peeled and cut into 3/8 inch slices
Nayonase
Lemon pepper
Vegan Parmesan cheese

Coat each side of eggplant with Nayonase and dust with lemon pepper and Vegan Parmesan cheese. Place on Teflon coated pan and bake at 450 degrees for 8 to 10 minutes. Serves 2 slices per person. Serve immediately. Easy.
EGGPLANT (EASY DISH)

2 tbsp. Earth Balance or olive oil
1 sm. onion
1 green pepper, diced
4 tomatoes, peeled & chopped or 1 lb. can tomatoes (cut up)
1 med. to lg. eggplant, cubed (unpeeled)
1/2 tsp. basil
1/4 tsp. oregano
Salt & pepper as desired

Saute onion and green pepper in Earth Balance in a large skillet. Add chopped tomatoes and simmer a few minutes. Add eggplant, herbs and seasonings. Cook over medium heat about 15 minutes, or until vegetables are tender.
Serve hot garnished with Vegan bacon bits, as a side dish with dinner or as a supper dish (spoon over hot rice). Serves 4 or more. (Zucchini and other squash may be substituted for eggplant.)

Indian Eggplant Stir Fry Recipe

INGREDIENTS:
2 tbsp olive oil
1 eggplant, diced
2 cups broccolil, chopped
1 tsp salt
2 cloves garlic, minced
1/4 tsp asafetida (optional)
1/4 tsp cayenne pepper
1/4 tsp paprika
3 tbsp water
PREPARATION:
Sautee the eggplant and broccoli in the olive oil over high heat for 3-5 minutes, until eggplant is lightly browned.
Add salt, asafetida, cayenne and paprika and stir to mix well.

Reduce heat to medium low.

Add water and cover. Allow to cook another 5-7 minutes, until broccoli is tender.
Serve over rice if desired and enjoy!

Note: Asafetida has a garlicy taste. If you don't have this spice, then just add another clove of garlic or some garlic powder.

Alot of eggplant dishes can be made without breading the eggplant first. I prefer my eggplant with the skin taken off. I make 1/4 -1/8 inch slices and salt them liberally. This causes them to "sweat", which gets rid of the bitter aftertaste associated with eggplant. After the "sweating", rinse the eggplant slices and dry them off. You can make "Eggplant Parmesan" by layering the eggplant with ricotta, parmesan, and marinara sauce and baking for 1 hour. Serve with spaghetti.

Another option with eggplant is to season it with cumin, garlic, and lemon and make a traditional Greek dip to be served with pita.

I had a great appetizer this summer wherein eggplant was skinned and sliced paper thin. A piece of Asiago cheese was placed between slices, one slice had a bit of dijon mustard on it, and then they were cooked in a panini maker. The result was awesome!

You might also consider layering your eggplant with sauteed groundbeef or Italian sausage, bechemal sauce, and marinara, along with pasta for a casserole.

Do you have flour? You could do eggplant parmesan. Dip eggplant in egg wash and then into flour. Then fry in pan until done. Serve over pasta or good bread and top with tomato sauce and Parmesan cheese and mozzarella cheese. You can substitute whatever cheeses you have on hand as well.

You can make a good eggplant parm. without breading. Prebake slices of the eggplant in the oven on a cookie sheet, then proceed with layering in a casserole dish with the cheeses and sauce.
