Go with the saute. If you have any mushrooms, add these as well. Here's one way I occaisionally do this: Saute the onions, peppers (and mushrooms, if you have them) in some olive oil, or butter, etc. I would use medium low heat and do this slowly. Remove and set aside. Heat pan to very hot (just starting to smoke) and quickly sear steaks in pan on each side. Finish cooking steaks as usual (grill, broiler, whatever you use). Add about 1/2 cup of wine (and/or canned broth) to pan, scrape loose any brown bits from the searing of the steak, and boil the liquid down. Return the sauteed vegetables to pan, stir for a minute then serve with the steak.

You can cut the onions and peppers into even strips, saute them some olive oil and balsamic vinegar until tender. They will look nice served on the steaks.

If you like peppers, try this for a tasty side dish. Use the long "horn" peppers... red or green (red are tastier)

Wash, remove the stem and seeds but leave the rest of the pepper intact. Grill the peppers (electric grill, oven or BBQ until they have some color and are tender. Place in a deep dish, slice them in halves or thirds, lengthwise.

Sprinkle some finely grated garlic, olive oil and and vinegar.

You can also stuff them before grilling with a piece of hard cheese. You don't want the cheese melting all over the place.

With or without the cheese... the peppers with oil, garlic and vinegar are delicious. You can prepare them before hand and keep them in a Tupperware. They last for days and.

I think you have a classic winner there, steak with onions and peppers. Grilled sausages will also go well. If you want a different variation, make some garlic mashed potatoes. Peel a head of garlic (or less if you are not a fan), and slow simmer them in heavy cream in a covered sauce pan until they are soft. Turn off heat and let them sit in the cream for as long as you have. Run the mixture in blender and mix it as you would cream/milk into the cooked potatoes.

Definitely make steak fajitas.
Slice into thin strips, season with salt and pepper.
Warm up some flour tortillas in the oven.

Add things like shredded lettuce, cheddar cheese, pepperjack cheese, provolone cheese, whatever you like for cheese lol, some salsa with a spicy kick, some sour cream, guacamole, whatever! Or you could make steak quesadillas.

Take two flour tortillas and lay one flat, fill with strips of steak and onions and peppers and cheese, top with other tortilla. Throw it in the oven until it gets nice and crispy. When you pull it out of the oven, thats when you throw on a handful of cheese and the condiments you like.

You could just use it as a Steak topping, or go a little step further and make fajitas. Just slice the steak and sautee until done to your liking. Sautee the peppers, I like to keep them a little firm. You can make fresh guacamole with some ripe avacado and lime juice.

I would make french dip sandwiches or philly cheese steak sandwiches. You have all of the ingredients except for cheese and rolls... and au jus if you go with the french dip.

You could also do fajitas. Just add tortillas, sour cream, cheese and guacamole and you'd be good to go.
