Mine are almost ripe and I still have a bag full of them in my deep freezer from last year and I've got no idea what to do with them.

Wow, great recipes and such variety, too! The one pie sounds just like regular fruit pie, and my mom would probably be most interested in the pies. I'll probably try adding some to apple pie as you all suggest. That bread recipe is really intriguing and looks very very healthy. I wonder which pie is better, using it as a regular fruit pie with sugar and lemon juice or trying it with the vinegar? It's so hard to find elderberry recipes. You guys are great.

Ingredients
2 1/2 c Elderberries 1/8 ts Salt
1 c Sugar 2 tb Flour
3 ts Lemon juice or vinegar
Directions
Pour the washed elderberries into an unbaked pie crust. Mix together the other ingredients and pour the mixture over the berries. Cover it with a top crust. Bake the pie at 424 oF for 10 minutes, then reduce the temperature to 350 oF and bake it 30 minutes longer

Elderberry Jam from the Ball Blue Book

2 quarts crushed elderberries

6 C sugar

1/4 C vinegar

Combine berries, sugar and vinegar. Bring slowly to boiling, stirring occasionally until sugar dissolves. Cook rapidly until thick. As mixture thickens, stir frequently to prevent sticking. Pour, boiling hot, into sterilized jars. Adjust caps. Yield: about 3 pints.

Elderberry Crunch Bread
INGREDIENTS
3 3/4 cups rye flour and 1 1/3 cups barley flour, or 1 1/3 any whole-grain flour
5 tablespoons freshly ground flaxseeds
1 teaspoon baking soda
1/2 teaspoon salt
3 1/4 cups apple juice or other unsweetened fruit juice
2 tablespoons corn oil
1 teaspoon coconut extract (optional)
1 teaspoon amaretto extract (optional)
2 cups elderberries
1 cup granola
1 cup shelled raw sunflower seeds
1 cup unsweetened shredded coconut
2 tablespoons lecithin granules
1 teaspoon ground cinnamon

1. Preheat the oven to 350 degrees.
2. Mix the flour, ground flaxseeds, baking soda, and salt in a large bowl. 3. In a medium-size bowl, mix together the apple juice, lemon juice, corn oil, and extracts. Mix the wet ingredients into the dry ingredients, being careful not to overmix. Stir in the elderberries, granola, sunflower seeds, coconut, and lecithin.
4. Press the dough into 2 oiled 8 1/2 x 4 1/2 x 2 1/2- inch bread pans. Sprinkle the cinnamon on top. Set a pan of hot water on the bottom of the oven to keep the crust soft. Bake the loaves until a toothpick inserted in the center emerges clean, about 1 hour.
5. Remove the loaves from the oven and let them cool on a wire rack before slicing.
