Try Pork Loin.
All you need is a nice pork loin water salt pepper and veggies.
There is enough natural juice in the pork to make a yummy broth.
Cook on low for 8 hours or high for 4.
To make a gravy with it all you need is to boil some water out of the broth and add corn starch and salt to taste. This will help make the meal more hearty.
Sometimes I also use a beef bouilon cube or two because it gives it a more unique flavor.

I just bought my first crock pot yesterday and made the best roast last night. Really easy carrots, onions, potatoes, mushrooms, and celery were put in with the roast then sprinkle in a packet of onion soup mix and cover with the cream of mushroom soup (made with the water). put it on low and cook all day. I also spent a good part of the afternoon looking up recipes on Recipezaar where there are only about 150 pages of crock pot recipes. there are too many to list but many I just HAVE to try. lol

I love to make pot roast in the crock pot. I use some onion soup mix if I want to be lazy instead of chopped onion. Add the meat and veggies, cook for several hours and it will be really tender and delicious. Fall is the perfect time for it also =)

take a pork roast and enough ***** to cover. cook 7-8 hours.
make chili. for 1 1/2 lbs burger we use 1 can undrained kidney beans, 1 can tomatoes, and 1 lg can tomato juice. add 1/4 cup dried minced onion, 1 to 2 tablespoons (or more to taste) chili powder, 1tablespoon cumin. mix well. cook on low 7-8 hours. break up burger when done.

put a pork roast or some turkey pieces in there, and pour in a can of cream of mushroom soup and a small amount of water, a dash of dried thyme, seasoned salt, garlic powder,and some black pepper. you can also throw in some carrots, diced potatoes, and onions. set it, and let it cook on low all day.
you can make a pot of rice, or mashed potatoes, a green dinner salad, and some dinner rolls, and your dinner will be awesome!

my mom recently gave me a cookbook just for the crock pot called Tase of Home: Slow Cooker Recipes....it is wonderful. I think she found it at Lowe's...Are you looking for chicken, pork or what?
