I will not be providing a grill so I cannot cook the foods there and we will be staying 1/2 hr from the tailgate sight at a friends house (we will be out of town not close to home)
does anyone have any pasta salad recipes, sandwich recipes, or snack items small bite foods to recommend?

thanks ahead for the input.

already tried tailgaiting.com sorry but that site kinda bites they don't have that much for people who are not able to cook at the site

Wicked Sub Recipe.
get a loaf of Italian Bread at least 12 inches long.
Get 1/2 lb of:
Salami
Ham
Capicola
Proscuitto
Provolone Cheese
Slice tomatoes
Chop lettuce
Slice onions(optional)
Add Hot peppers(optional)
Sliced Black Olives
Seasoning with Parsley Oregano and Garlic powder.

Buy a tiny little 2-burner propane stove from a WalMart type store. They cost less than $30 last for years and are worth every penny - especially if the power goes out in a storm. They burn propane gas - in little cylinders you can also get at those kinds of stores. I've had mine for 10 years or more - great investment. Then you will have 2 burners on which you can COOK food. With this you can COOK - sloppy joes, chili dogs (a small charcoal grill is what, $5 or so? and instant light charcoal comes in small bags too) hot soup (for cold football games) and don't forget - hot tea, cocoa, and coffee. MMM! nothing like a plenty of hot drinks on a cold fall day. Oh, and after the game/race/event, set up the tailgate once again and have another tailgate party for the next hour or two while all the traffic goes by you. Then you're free to leave without all that snarl to deal with. Otherwise go to Subway and order one of those 12' long party subs.

If I were going to do the tailgating food,it would be quick and easy.Buy or bake some chickens(rotisseries are great)a green salad with all types of veggies,rolls,bowl of fruit,chips&bean dip(no refrigeration needed),salsa,and drinks.Sweets could be brownies,cookies,or cupcakes.All but the fruit goes well with beer.Cold chicken with the extra fat cooked off is good and lasts with no fridge.Make it easy on you call around and see the price of cooked chickens at the grocery store.The rest of the stuff can be put togather and put in fridge ahead of time.Take along some throw away cups to eat the fruit out of.Have fun.

Homemade Pimento Cheese Sandwiches:
Mix 2 cups of sharp cheddar cheese with 1 tiny jar of pimentos, 1/2 cup of mayo, and a dash of cayenne pepper. Put in microwave for 1 minute intervals, stir and repeat until the cheese is about halfway melted. Spread on white bread and cut into finger sandwiches removing the crust from the edges...A southern favorite....Delicious....if you don't like pimentos you can omit them. Just make ahead of time and store in an airtight container in the refrigerator then transfer to a cooler before heading to the tailgating.

Sausage/Cheese Balls: (These travel well!)
3 cups Bisquick
1 lb pork sausage
4 cups cheddar cheese, shredded
1/2 cup grated parmesan cheese
1/2 cup milk
1/2 teaspoon dried rosemary
1/2 teaspoon parsley flakes

Heat oven to 350 degrees.
Lightly grease bottom and sides of a jelly roll pan.
Stir together all ingredients, using hands or a spoon.
Shape mix into 1 inch balls.
Place on pan.
Bake 20-25 minutes or until brown

Brownies are so good out of the box these days...just buy a box and bake them...you can't go wrong with chocolate!

The good news is that all of this can be made in advance.

Any kind of finger food is best. Anything that requires forks, spoons etc can be a hassle. If you can prepare foods before the event to bring with you, here are a few suggestions...

Hot wings.... you can make these at home, wrap them in tin foil and bring with you. They are good served cold as well as hot.
Pigs-in-a-blanket- also good served cold-
chips and dip, pretzles, chex mix
you can also do fresh fruit skewers... small bites of fruit skewered on a toothpick ( grapes, berries, and balled up melon)
as far as sandwiches go, you can never go wrong with sloppy joes, sliced bbq, or just plain old cold cuts and cheese.
All these foods are good served hot or cold.

Go by walmart and grab a couple of their roasted chickens
and a case of tall brew, a few bags of toastitos and some bean dip. Pick up some macaroni salad and some antipasto from their deli. Its all ready in plastic containers good to go!Don't forget the Ice. Go Saints!

i use a combination balsamic glaze and dijon to pan fry meat and give it a bbq kind of sear on the outside -- you can make a ton of boneless chicken thighs and serve them on a foccacia roll.

to make a balsmic glaze you just use 1/2 cup balsamic and add about 1/4 cup packed brown sugar. simmer it until its reduced -- about 10 minutes. add 1/4 cup dijon and let leave the meat marinating in it in the fridge over night -- the vinegar will help preserve the meat..

i usually use this with my overly simple cole slaw -- a bag of slaw mix and 8 oz ken's steak house vidalia onion dressing.

its quick and easy to prep food that people won't recognize as quick and easy to prep food.

cucumber salad:

6 large cucumbers (sliced into rounds)
6 large tomatoes (cut into chunks)
2 cups of red wine vinegar dressing
dash of salt and pepper
3 tablespoons of Italian seasoning

combine all the ingredients in a bowl and refrigerate for a couple hours. keep it covered in plastic wrap or put it in a bowl that has a lid.

You could put hot wings in a crock pot and bring them along, also hoagie type sandwiches, chips and dip.

make a man sub: get one of those huge sub loaves, fill it up with meat, cheese and more meat and then cut it into man sized sections, serve it with some potato chips or veggies and dip.
