Make Chicken a la Russe. Season and flour the chicken and saute' in olive oil until browned. Remove from pan put in a casserole. In the pan add a bit more oil and saute' diced onion and minced garlic, mushrooms if you desire. Add to casserole. Deglaze the pan with a bit of chicken stock(a bit of wine if you like) and a can of tomato puree. Add this to casserole and bake at 350 for about an hour to hour 15. Towards the very end of cooking time take out casserole and add a cup or so of sour cream. Serve with rice or egg noodles. Hope you enjoy.

Boil the chicken, shred it, and make Enchiladas out of it. Or make a Tostada salad out of it - for the Tostada salad, you take 1 tortilla shell per person, fry it up in a little oil, place it in a plate, spread hot refried beans over the tortilla, then the chicken, then shredded lettuce, diced tomatoes, black olive slices, shredded cheddar cheese, and serve with sour cream and Guacamole. Great on a hot day.
I think our local restaurant boils them in a mixture of water and salsa because they have a little tomato/spice taste to them.

season your chicken pieces with seasoned salt, garlic powder, and black pepper, and saute them in a oiled skillet on both sides until browned.
pour in a can of cream of mushroom soup, a half can of water, and some dried thyme.
put a lid on it, and let it simmer for 30 minutes until the gravy is smooth.
add in some sliced onions, and baby carrots if you like. (or diced potatoes)
this meal is done when the chicken is tender and the veggies are soft.
cook a small pot of rice, a green dinner salad, and some dinner rolls.

Marinate in italian dressing and a bit of beer for about an hour. You can grill them or bake them surrounded by red potatoes, leaks, etc. - Serve over rice.
2nd option:
Bake with just salt and pepper. Allow to cool then shred. Add to tortillas with cheese for a nice taco or go one step further. Dip corn tortillas in "salsa" of your choice, fill with chicken and cheese and bake again until cheese is melty and yummy. Serve with guacamole and sour cream...

Cut small gashes in them ... marinate them in plain yogurt, curry powder, garlic and ginger. Let it marinate for at least 3 hours or overninght.
Heat your oven to 375 .. shake off the excess marinade and bake for 45 minutes.
Or ... season the legs with salt and pepper ... brown the legs in a skillet. Remove from pan .. add crushed garlic and chopped onion to the drippings .. When the garlic starts to brown lightly, but not burn, add one can of chopped tomatoes .. chopped bell pepper and oregano. Season with salt and pepper. Add the legs and let simmer for 30 minutes.
Serve with rice or pasta.
