I am trying to eat clean since I take my working out at the gym seriously. I'm having a really hard time with esp. breakfast. I work the typical 8 hour day and tend to do breakfast at work. Any ideas? We only have a microwave and fridge here at the office.

I work out a lot to and can tell you that breakfast is a must. A lot of time I will do a granola bar and a cranberry juice, or just take a yogurt and mix in some raw oatmeal. Let it sit for awhile to soften and eat up, good and good for you. Another thing you might try is eggs. You can take them to work keep them in the fridge and scramble them in a bowl in the microwave. Just add a little milk to them when you beat them up and it works great. Yes eggs are a little high in cholesterol, but they are a great source of protein and if your working out the cholesterol shouldn't be a problem. If your worried you can boil the eggs the night before and take them in and only eat the whites. Good luck!

Besides the obvious oatmeal and whole grain cereal with skim milk, here are a couple recipes:

HOMEMADE EGG MUFFIN
One egg
One slice lowfat cheese
One slice Canadian bacon or Healthy Choice ham
One Thomas Whole Grain LITE English muffin

You can prepare these in advance. First, toast the English muffin. While it's toasting, cook the egg in the microwave in a Tupperware or Rubbermaid container with Saran Wrap over it for 30-35 seconds. Let the egg cool once it's done, take the egg out of the dish, then assemble it with the other ingredients just like an Egg McMuffin. Store it in the refrigerator overnight. When you're ready to eat it, wrap it in paper towel and microwave it for 20-30 seconds.

EGGS BENEFICIAL SANDWICH

1 large whole egg plus 3 large egg whites
1 teaspoon ground flax seed
2 slices toasted whole-wheat bread
1 slice Canadian bacon or Healthy Choice ham
1 sliced tomato

Scramble the eggs, add the flax seed, then fry in a non-stick skillet spritzed with olive oil. When finished, dump the eggs onto the toast and add the rest of the ingredients. Again, you can prepare this one in advance, store it in the refrigerator overnight, and microwave for 20 seconds or so wrapped in paper towel when you're ready to eat.

POWER PITA

1 whole wheat pita, cut in half
1 1/2 teaspoons lowfat cream cheese
2 slices Healthy Choice turkey or ham
Romaine lettuce and tomato

Spread cream cheese in the pockets of the pita. Stuff with meat and vegetables. DONE!!!

I think they sell bowls of oatmeal you can microwave. Or what about some yogurt and mix in some granola. You can bring in some fruit cups.

You can get good wholegrain bread and vegetable sandwiches. Try cereal with almonds, raisins etc. for a change.
