I tried them for the first time the other day in a restuarant and think they are lovely, any recipes involving them - ie as a complete meal with meat of some kind would be appreciated, thanks!

Sweet Potato Risotto With Pecans

This is a fabulous combination, and you'll want to make again and again. Serve as a side dish or serve as a main dish or lunch with a chopped salad and crusty bread.
INGREDIENTS:

* 4 tablespoons butter
* 2 tablespoons minced shallots
* 1 medium sweet potato, cut in small dice, about 8 ounces or 2 cups
* 1/3 cup chopped pecans
* 2 to 3 cups vegetable broth
* 1 cup Arborio rice (about 6 to 7 ounces)
* salt and freshly ground black pepper, to taste
* 1/2 cup fresh grated Parmesan cheese
* 1 tablespoon finely chopped green onion tops or fresh parsley

PREPARATION:
Heat 3 cups of vegetable broth to the boiling point; reduce heat to the lowest setting to keep hot.

In a medium saucepan, melt butter; add minced shallot and pecans; cook until shallot is tender. Add rice and cook, stirring, until well blended.

Stir in sweet potato. Stir about 3/4 cup of the hot broth into the rice mixture. Cook over medium-low heat, stirring constantly, until liquid is absorbed. Continue adding liquid, about 1/4 to 1/3 cup at a time, stirring frequently, until the rice and sweet potato are tender (not overly soft). The texture should be creamy a little loose. This will take about 25 minutes and about 2 to 3 cups of broth. Stir in Parmesan cheese and green onion or parsley, then taste and add salt and freshly ground black pepper to taste.

Beef and Sweet Potato Pan Roast

Ingredients

* 1 Tbsp. dried Italian seasoning (I used oregano and basil)
* 2 cloves minced garlic
* 1 tsp. grey sea salt
* 1/2 tsp. black pepper
* 3 Tbsp. olive oil
* 2 lb. medium orange and/or white sweet potatoes, cut into 1-inch wedges
* 4 6- to 8-oz. beef shoulder petite tenders or 1-1/2 to 2 lb. beef tenderloin
* 1 cup cherry tomatoes
* 1 recipe Chopped Parsley Topping


Directions

1. Preheat oven to 425 degrees F. In a bowl combine Italian seasoning, garlic, salt, and crushed red pepper. Stir in olive oil. Reserve half of mixture. Place sweet potatoes in bowl; mix to coat potatoes. Spread potatoes in a single layer on greased shallow roasting pan. Roast, uncovered, for 15 minutes.

2.Place beef in remaining bowl. Swirl and flip to coat. In a skillet brown beef over medium-high heat, turning to brown evenly. Stir sweet potatoes in roasting pan and push to edges of pan. Place beef tenders in center of pan. Roast, uncovered, for 5 minutes. Add tomatoes; roast 10 to 15 minutes more or until instant-read thermometer inserted in center of thickest part of tenders registers 145 degrees F for medium-rare or 160 degrees F for medium doneness. Let stand for 10 minutes before carving. Serve with Chopped Parsley Topping. Makes 6 servings.

3. Chopped Parsley Topping: Stir together 1/4 cup snipped fresh parsley; 2 teaspoons finely shredded orange peel; 2 cloves garlic, minced; and 1/8 teaspoon salt.

4. Test Kitchen Tip: To substitute beef tenderloins for shoulder petite tenders, prepare potatoes and meat as at left, except do not roast potatoes before adding beef. Place browned tenderloin in center of greased roasting pan. Place potato wedges around pan edges. Roast, uncovered, 30 to 35 minutes for medium-rare (140 degrees F) or 40 to 45 minutes for medium (155 degrees F). Let stand for 5 minutes before carving beef.

5. Beef Shoulder Petite Tenders: The versatile petite tender is relatively new to the market. This juicy, lean cut from the top of the shoulder requires little or no marinating. Serve it roasted, grilled, or stir-fried. Each tender serves two.

Ingredients
- 1 package HORMEL® Fully Cooked Meat Loaf with Tomato Sauce (17 oz.)
- 1 can (30 oz.) golden sweet potatoes or yams
- 1/4 cup soft butter

Meat Loaf and Sweet Potatoes

Servings: 4
Prep Time: 2 minutes
Cook Time: 10 minutes

Directions
Microwave meat loaf according to package directions. Cover to keep hot. Drain sweet potatoes and place in microwave safe bowl. Microwave on high 2 to 3 minutes or until hot and steamy. Pour melted butter over sweet potatoes. Serve with meat loaf.
PREPARATION TIP: Add chopped parsley to melted butter and pour over sweet potatoes.

SERVE WITH
side salad of Romaine lettuce, chopped celery and chopped tomatoes with Caesar dressing.

Roast Sweet Potatoes With Meat

Instructions

Pare, cut lengthwise, salt and put them around roast meats or poultry of any kind. Roast about three-quarters of an hour, or until brown.....

Cut the sweet potatoes into fries. Don't peel. Mix together olive oil and balsamic vinegar. Mix the sweet potatoes in the vinegar mix. Lay on a cookie sheet and sprinkle with dried rosemary. Bake at 350 for about 40 minutes.

Ingredients sweet potatoe fries 2 large unpeeled sweet potatoes (about 2 pounds) 1 T olive oil 1 t ground cumin 1 t ground coriander 1/4 t black pepper Vegetable cooking spray Directions Clean potatoes, cut into french fry strips (1/4-inch by 1/4 inch). ( i sometimes make them big country style and peel them) Combine oil, cumin, coriander, and pepper in a large mixing bowl. Add potatoes and toss well to coat. Arrange on a single layer on a baking sheet coated with vegetable cooking spray. Bake at 425degrees for 15 minutes. Flip potatoes over, and bake for another 10-15 minutes until browned. Notes: - Flavor is best if potatoes are well coated when tossing with oil and spices. - When spreading the potatoes on the baking sheet their sides can touch, but its best if they don't overlap. My great great g randdaughter loved them!

Twice baked sweet potatoes are easy to make in the microwave:

2 sweet potatoes or yams
6 tbsp. caramel or butterscotch ice cream topping
2 tbsp. butter
1/8 tsp. ground cinnamon
Dash of ground nutmeg
2 tsp. toasted chopped pecans, (optional)

Wash potatoes, pierce each potato several times with a large fork to allow steam to escape. Place potatoes in microwave at High for 6 to 7 minutes. Turn potatoes and rearrange after 3 minutes. When done, wrap in foil. Let stand 5 minutes. Cut top off hot baked potatoes. Scoop out hot potato with a spoon, be careful to keep shells intact. Set shells aside. In a mixing bowl, combine hot potato, 1/4 cup ice cream topping, butter, cinnamon and nutmeg. Beat with electric mixer on High speed until fluffy. Spoon mixture into potato shells. Place on a serving plate. Cover with vented plastic wrap. Microwave at High 3 to 4 minutes or until heated through. Top with remaining 2 tablespoons topping. Sprinkle with chopped pecans, optional. Makes 2 servings.

Slice them into crisp shapes that are about 1 and a half inches thick put them onto a baking tray and drizzle them with oil(olive or other) Put them in the oven at 200C and just cook them until the outside is crispy and the inside is soft(about 20-40 mins) they come out like soft roast potatoes and can be eaten with just about anything

Make french fries with sweet potatoes, salt them, and serve them with a little cup of raspberry vinegar on the side for dipping.

Or, bake them for an hour at 400, then split them open, top with salt, pepper, butter and some seedless blackberry preserves. Yum.

Peel and dice the sweet potato. Place in pot and cover with water. Cook until vegetables are tender. drain and place back in pot. Add 3 tablespoons sugar and mash. Place back on heat unill all the liquid has evaporated. Serve with meat, rice and other vegies.

I put them in the roasting tin with the meat and roast pots, add them later than the roasties because they don't take so long to cook as regular pots, I think that roast sweet pots are just a lovely addition to a Sunday roast.. Or you can chip 'em or fry 'em... they are the bee's knees.. Leave them in their skins and bake them, anything, but be careful if you boil them, they don't take as long as regular pots.. Enjoy..

I was in exactly in the same situation last week, so i looked on http://allrecipes.com/Search/Recipes.aspx?WithTerm=sweet+potato and found lots of recipes. I made the soup and the pancakes and they were sooooo yummy!
