No side dish needed but you can put this on the plate.
Julienne a few carrots - the whole length. heat up some olive oil in a heavy pan and fry them until nearly crunchy. Lay your swordfish steak on a bead of these.
1st course: Pasta with garlic & olive oil (hot pepper optional)
2nd corse: as above
3rd - a Greek salad.

Spicy Tuna Steaks: Ingredients: * 1/4 cup vegetable oil * 4 cloves garlic, crushed and minced * 2 tablespoons soy sauce * 1/4 teaspoon dry mustard * 3 tablespoons fresh lemon juice * 1/2 teaspoon freshly ground black pepper * 2 pounds tuna steaks * 1 lemon, cut in wedges Preparation: In a jar or bowl, combine oil, garlic, soy sauce, mustard, lemon juice and pepper. Shake or whisk to blend well. Rinse tuna steaks under cold running water and pat dry. Place the tuna in a shallow bowl; cover with marinade, cover the bowl, and refrigerate for 1 hour. I'd definitly do a rice dish. Or maybe cous cous, which is super easy. You could do a nice rice pilaf and steamed veggies. I also like to do a grilled vegetable mix when serving seafood. I use yellow and green squash, fresh tomatoes, mushrooms, red, yellow green and orange peppers, sometimes asparagus, or any vegetable of your choice. Place them on foil coated with olive oil on your grill surface or use one of those disposable pans. Use your favorite seasoning...I like lemon pepper and freshed cracked pepper blend. It's absolutely delicious and the perfect compliment to the fish!

GRILLED ROSEMARY GARLIC SWORDFISH
Serves 4
Prep time: 30 minutes (just enough time for a bottle of wine)
Cooking Time: 20 minutes
INGREDIENTS:
(4) Swordfish steaks, 1" thick
Rosemary seasoning
4 Garlic Cloves
Olive Oil
Side dish ingredients:
(1) Yellow Squash (medium)
(1) Zucchini Squash (medium)
(1) 12 0z. can Stewed Tomatoes
Italian seasoning
Cooking Sherry
DO THIS:
Combine 1/4 cup of olive oil and 2 tablespoons of rosemary seasoning in a small mixing bowl. Set this aside.
Put 2-3 tablespoons of olive oil in a saucepan and quickly bring to high heat. Crush the garlic cloves, add to the hot olive oil and lightly brown.
Add browned garlic and olive oil to the small mixing bowl with oil and rosemary seasoning. Mix well.
Fully coat the swordfish steaks with the garlic, rosemary, olive oil mix, and set them on a flat platter. With a fork, poke many small holes into the swordfish – on both sides. Pour the remaining olive oil season mix over the steaks, turning the steaks over once to make sure both sides are fully coated.
Set this aside for 30 minutes to allow the season mix to infuse the meat – break out a nice bottle of chilled sweet wine – like a 1996 Coppo Moscato d'Asti Moncalvina, and use this time to socialize with your friends.
WARM UP THE BARBIE –
When hot, place the steaks on the Barbie. The olive oil will help quickly sear the outside. Flip steaks after about 5 minutes, painting more of the rosemary garlic oil from the flat platter.
Close the top of the BBQ, turning down the heat to let the steaks bake for about 20 minutes.
THEN DO THIS FOR THE SIDE DISH:
Clean and slice the summer squash and zucchini into 1/8 inch slices. Add these to a microwavable bowl and set aside.
Add a can of stewed tomatoes and 2 tablespoons of Italian seasoning to a saucepan. Bring the tomatoes to a boil, stirring frequently. As soon as the tomatoes begin to boil, remove from heat, and add the tomatoes to the bowl with the zucchini and summer squash. Add 1 tablespoon of cooking sherry, mix well, cover and place into a microwave.
Microwave on High for 5 minutes (or until the squash is al dente).
SERVE
The side dish and swordfish should both be done at about the same time. Serve up this flavorful, light dish, add your favorite dinner wine, and enjoy.
Sesame Lemon Pepper Swordfish Recipe
INGREDIENTS:
* 2 (1-inch thick) swordfish steaks, about 1 pound
* 1 teaspoon mayonnaise
* 1/2 teaspoon kosher salt, or to taste
* 1/2 teaspoon lemon pepper
* 1/4 teaspoon dried dill weed
* 2 teaspoons sesame seeds
* 1 Tablespoon butter
PREPARATION:
Smear tops of swordfish steaks with half of the mayonnaise. Sprinkle with half of the salt, lemon pepper, dill weed, and sesame seeds.
Press lightly to adhere. Turn swordfish steaks over and repeat so both sides are coated with spices, herbs, and sesame seeds.
Heat a heavy skillet over medium-high heat to the smoking point. Add butter to the pan and swirl to coat. Place swordfish steaks into the hot pan. Sear on each side until browned, turning only once. Do not overcook the swordfish or it will become dry and tough.
Serve immediately with lemon or lime garnish.
