Particolor is usually regarded as a white with spots of another color though the spots can be so big as to cover more dog than the white and perhaps be called white spots on a colored dog. Most dog breeders call the dogs born greyish as the color blue (they can look bluish in some light) - grey being the color they get when they get old. The only two versions of grey & gold I know of would be a blue brindle, if the grey & gold are arranged in stripes ,or a Blue & tan, which would have a Rottie like pattern with the blue substituting for the black.

Sounds like a blue brindle to me, different breeds call colors different names. A Choc/tan MinPin is a Red/tan Dobe, Labs are Chocolate but German Shorthairs are liver, a Boston Great Dane would be a Parti colored poodle or cocker spaniel. The only breeds that I know that use Parti colored are poodles, which the color is a disqualifaction and Cocker Spaniels. But a wolf sable would prob be considered grey and gold to but the hairs are banded not 1 single color. It would help if you had pics or a breed named.
