You have really struck a nerve with this one.My favorite birthday cake of all time is a really moist carrot cake with cream cheese icing. I wish that I had some now.

Yes it is delicious! I do wonder how the recipe came about though. Who would think of putting carrot in a cake? And how would they have known it would taste good?

I have made some that were good.The best one was made with spice cake mix,walnuts,and baby carrots in a jar.Very moist and good...

Love the stuff with cream cheese icing,of course.But it HAS to be moist~~nothing worse than a dry cake.
