I heard one of the healthiest is steel-cut oats. It's much coarser than rolled oats, so they take longer to cook, but I also heard they are much more satisfying.
Here's a steel cut oats recipe:
the night before bring 2 1/2 cups water to a boil. Add 2/3 cup steel cut oats. Stir, and let cool to room temp. Refrigerate overnight.
In the morning, add 1/8 tsp. salt to the pan. Bring to a boil. Simmer 15 minutes unti oats are tender but still chewy. Stir in 1/3 cup milk, and cook till creamy, about 3 minutes. Divide between 2 bowls...spoon on some brown sugar and toppings, such as banana chips, toasted nuts, sliced apricots, if desired.
(You can skip soaking them the night before, but you will have to simmer them twice as long in the morning)
