2day in my cooking class we were making bread. I followed the recipie exactly and then mixed everything with a knive as did everyone else. but then my bread was alot heavier than everybody elses and was more tough and didn't stretch... does any1 know why this is?

You might not have let your yeast proof or it might have just been bad yeast. Every once in a while, I get bad yeast even though it's within the expiration date and I use the right temp water for proofing, etc. What did your teacher say?

I can only think of a couple of things - not enough kneading, old yeast, not rising in a warm area. I turn on the oven to 400º for exactly one minute, turn it off, and put my bread (in it's covered bowl) in the oven to rise.

WHEN WE WERE YOUNGER MY MOTHER MADE ALL THE BREAD AND SHE USED TO SPRINKLE FLOUR ON A BOARD AND KNEAD THE BREAD USING BOTH HANDS AND TURNING THE BREAD AND CONTINUE KNEADING IT. KNEADING INVOLVES PUSHING ON THE BREAD WITH BOTH HANDS THEN FOLDING BOTH ENDS OF THE BREAD TOGETHER AND KNEADING IT AND REPEATING THE SAME MOTION FOR A WHILE. BE SURE TO SPRINKLE THE SURFACE WITH FLOUR SO THE BREAD DOESNT GET HUNG UP ON THE BOARD, THEN I THINK SHE CUT THE BREAD INTO SECTIONS FOR THE BREAD TINS AND LET IT RISE A BIT AND BAKE IT. ACTUALLY I THINK SHE LET IT RISE THEN KNEADED IT AND THEN SIZED IT AND BAKED IT.

maybe it needed more time to rise

Perhaps you didn't knead it long enough?
