Soba noodles (buckwheat noodles) with ponzu sauce, add steamed vegies on top. Stir fried noodles (chow fun or chow mein) with vegies & oyster sauce. Look in Oriental Foods section for Oyster Sauce, Ponzu sauce, Mirin (sweet Japanese cooking wine, & Japanese white wine vinegar) Japanese Teriyaki Sauce: brown sugar, ginger, green onions & shoyu.

Miso soup with: tofu, potatoes, sea weed (wakame)
Rice
cucumber sushi
tempura is GREAT with veggies: carrots, sweet potatoes, onion, potatoes, broccoli, egg plant. Just find Tempura mix at a large supermarket or preferrably Asian market.
All kinds of noodles are available too: udon, soba, somen, hiyamugi, ramen, chowmein. Often the noodle sauce is seaweed based (kombu).

Japanese curry with potatoes, tofu, carrots, and any other veggies you like is a good substitute. I think they do sell the curry mix in little sachets at supermarkets. Just follow the instructions a there you go. Serve with plain boiled or steamed rice.
