Do you like pasta? If so, I would make a quick pan sauce. While bringing salted water to the boil, roughly dice the tomatoes and set aside. Put a frying pan on med-high heat; meanwhile smash three garlic cloves and dice one medium onion. Put about 2 Tbsp extra virgin olive oil in the hot pan, test for heat with a drop of water (it should spatter a bit). Throw in your garlic and onions, stir to evenly distribute and to coat in the olive oil. Season with sea salt and fresh black pepper, Italian seasoning, crushed red pepper flakes; stir again. Cook for 5-7 minutes or until translucent; stir occasionally. Add your tomatoes and a splash of red wine; stir to combine. Your water should be at a boil by now, if so throw in some rotini or something with shape to "catch the sauce".
Continue to stir the pasta and the sauce until the pasta is almost al dente. Taste the sauce and adjust seasoning as needed; then put the pasta and a bit of the pasta water in the pan with the sauce. Stir and let cook off heat for another minute or two to let the pasta absorb some of the sauce. Taste again and re-season if necessary. Serve with fresh basil and grated cheese. (This recipe was from the top of my head. If you decide to make this, let me know how it turns out. :-))

Stuff one. Carve into the center with a paring knife to remove the tougher core. THen slice 3/4 of the way down in half then half then half again as if you were making a radish rose. Drizzle the inside lightly with garlic infused olive oil. Make up a batch of tuna, egg or chicken salad and fill the tomato with it

Why stop at a triple decker?
Go for a real Dagwood Sandwich!
Make it a five decker with lots of sliced tomato, and plenty of cold cuts, bacon, cheese, and lettuce.

How about a nice salad? Slice a tomato and some mozzarella cheese. Add some fresh basil and a light vinegarette dressing or just olive oil. Add some fresh cucumber slices also.

If you had cucumber and onions some salt/pepper and oregano, oil and vinegar you could make a salad with them. Just cut into wedges, slice onion and cucumbers in rings and add salt, pepper, oregano and stir, add vinegar (a lot) and some oil, let it sit for a while to marinate. It is very good and refreshing. A change from your normal lettuce and tomato salads.

Ok, it's called Italian Bread Salad. You need: 3 tomatoes chopped in large chunks, day old sour dough cubed, whole black olives, and Italian dressing. Toss altogether and serve fast before the bread gets too soggy. It's so perky.

Since you only have three tomatoes there's not enough to make a sauce for pasta. Enjoy them fresh...how about an omlet with fresh tomatoes, red pepper and cheddar cheese for breakfast!

Salsa. Or one of my faves---------- cut the top off of the tomato, put some olive oil or Italian dressing on, minced garlic, salt, blk pepper, and top it with a slice or 2 of provolone cheese. Wrap it in foil and put it on the grill of in the oven until soft. Then tear it up.
