DIJON CRAB CAKE SAUCE
1 tablespoon vegetable oil
1 small shallot, minced
1 small garlic clove, minced
pinch of kosher salt
1/2 oz white wine
2 tablespoons Dijon mustard
1 tablespoon butter
Sauté shallot and garlic until shallot is translucent. Add wine to deglaze pan, allowing to reduce for 15-30 seconds. Add mustard and salt; bring to boil.
Remove from heat. Add butter and stir gently.

Are they unfrozen? If the salmon is: Take some olive oil and rub on both sides. Sprinkle some lemon juice, salt, pepper . If you want you can add a lemon pepper season or season salt. Put in on a cookie sheet (I usually cover with foil so I can just take it off and be done) and with the oven turned to 375. Let cook for a good 15 minutes( or until it looses that fleshy color) depending on size of the salmon steaks. Enjoy

3 tablespoons milk
1 tablespoon canned chipotle chiles in adobo sauce
Combine all sauce ingredients in 5-cup blender container or food processor bowl fitted with metal blade. Blend at high speed until smooth (1 to 2 minutes).
