Made chili, but somehow all the liquid (1 can tomato sauce 1 cup water) cooked off. The recipe called for it to be simmered 1 hour and by the time i checked it all the liquid was gone! how can i fix it now?

Simply add water, simmer on low.

After simmering for a while, taste to make certain you haven't scorched any ingredients. If you still need liquid you can add a can of peeled tomatoes, tomato sauce or tomato paste.
Adjust your seasonings and simmer real low and slow for 30 minutes. Taste and serve.

It sounds like the temperature was higher than a simmer. Also if you have a lid on it helps retain liquid and not let it cook off so quickly. To salvage add a can of tomatoes seasoned with chili spices and reheat.

Add more liquid. Also, always simmer chili with a cover on low heat. This will help the liquid from evaporating.

For latest mistake of too a lot salt.. then the sliver of uncooked potato then throw away the potato (Or use a wedge of uncooked apple) they are going to take up the salt.. Or a can of peel tomatos or upload slightly brown sugar. in case you're commencing with a clean batch a clean soup.. evaluate each and all the failings which will make a contribution salt of course... you are going to be able to desire to what to no longer upload salt in any respect on objective. Just add some more water or broth. Broth taste better. You might need to turn your heat down. That would explain the loss of liquid.

Add two cans or bottles of beer, and bring to a boil(this will get rid of the alcohol). I always do two cans of diced tomatos with the juice, two cans of beer, and one can of tomato paste. Everyone that eats my chili says it's amazing, and I think it's because of the beer.

Add beef broth and some extra seasonings. Dilute with more water if necessary.

the beer solution is perfect.also add a cube of broth.if you have cummel seed add some too.good luck!
