I want to be at least 5'8.5" tall or 5'9" (I am currently 5'7 3/4" tall, is it possible to gain up to 1 inch through stretching my spine with specific exercises for many years?

Sorry, but no. Your height is predetermined by genetics. It can be stunted by improper diet or some illnesses but there is nothing you can do to be taller without medical intervention. A doctor will not intervene unless you will be of greatly less than normal height. A male will continue to grow until age 21 while a female reaches full height at 18. So, if you haven't reached the age of your majority, you still have growing time left.

By the way, always stand straight with excellent posture and have an air of confidence and you will appear taller than you are.

I honestly don't understand the hang up on height to start with since you are not short. The average female is 5'4" so you will tower over most of them as it is. Enjoy who you are and don't sweat the things that don't really matter.
