We all have to bring something. I want it to be something good but easy to make without alot of ingrediants. It will be for about 40 people but doesnt have to feed them all. We are having Tri-tip, sausages, and oysters as the meat. Thanks.

It's a good time of year for mix of Mellon balls. Water Mellon, cantaloupe and muskmelon.

Make an ice bowl and use fresh garden flowers for decoration inside the ice. Fill the ice bowl with the mix of Mellon balls. Garnish the Mellon's with fresh mint.

Making an ice bowl is easy, in a large stainless steel bowl with a smaller stainless steel bowl inside it. Fill the space between with water, weigh down the smaller bowl with what you have on hand. Make sure the small bowl floats some - what above the bottom of the large bowl to form the bottom. Place flowers in between the bowls so the water surrounds them.

Freeze in a level spot in your freezer. At the party fill your beautiful bowl with the colorful mix of Mellon balls and garnish with the fresh mint.

Very easy with few ingredients, garlic bread.

Make a spread with softened butter, chives, minced garlic, parsley or just a garlic seasoning. You can even get a garlic spread ready to go although that is not as fresh and good.

Buy a couple of loaves of good, crusty, rustic bread. You can slice them up and add the spread individually to grill with the meats or slice the bread most of the way through, put spread in between the sections, wrap in foil and heat on the grill.

This would go with everything from the sausages to the oysters. If you want to get fancier, you can use different types of bread all sliced or cut up in individual portions.

there are many options - pasta salad or sliced fruit would by my pick.

Either just slice a variety of fruit (strawberries, apples, bananas, pineapple, etc.) and serve with fruit dip - be sure to put some lemon juice on it to keep it from turning brown.

Pasta salad
1 box elbo macaroni or rotini
1 bottle italian dressing
1 onion diced
2 cups cubed cheddar chesse
2 carrots shredded

Cook the macaroni, and then pour everything else overtop, stir and store in the fridge. Make it about a day or two before the cookout because it will taste better and marinade.

You can add more veggies like grape tomatoes if you choose and because it is not mayo based, it will not spoil.

I think the following would be wonderful with the meats you list above. It doesn't have a lot of ingredients and is easy to fix.

Portobello Salad with Crispy Prosciutto

1/4 pound thinly sliced prosciutto
4 small portobello mushroom caps, stemmed and thinly sliced
6 ribs celery from the heart with leafy greens, thinly sliced on an angle
1/2 small red onion, thinly sliced
1/4 cup extra virgin olive oil
Juice of 2 lemons
Salt and pepper
2 cups baby arugula
1/2 cup flat-leaf parsley leaves


1. Preheat the broiler. Arrange the prosciutto in a single layer on a foil-covered baking sheet and broil until crisp, 3 to 4 minutes. Set aside.
2. Toss the mushrooms, celery and onion with the EVOO and lemon juice; season with salt and pepper. Arrange on a platter and top with the arugula and parsley.

Tuna Sandwiches

1 loaf - Sandwich bread
Margarine
1 Can - Tuna flakes in water/olive oil
1/2 to 1 - Onion, peeled and diced
1/2 tbsp - Mayonaise
Slices of tomatoes
Slices cucumber or lettuce
Salt & pepper to taste

Try to drain away as much of the water/olive oil out from the tuna flakes to avoid mixture being too wet.

Mix the tuna flakes, mayonaise, diced onions, salt and pepper in a large bowl. Spread the bread with a thin layer of margarine and then place a sufficient amount of tuna spread. Top with a layer of tomatoes and cucumber/lettuce.

Make the quantity that u think is enough for your party...

It's a great finger food that can is easy to make, easy to pack for picnic and can fill the hungry stomach. Try and hope you'll like it...

Frittata. Ham.
6 eggs beaten.
1 teaspoon oil.
½ cup grated cheese
200g ham.
Tomato.
Salt and freshly ground Black Pepper.
1 table spoon of Fresh chopped parsley.

Heat the fry pan and add oil on a low heat and add cheese, ham, tomato, salt and pepper to beaten eggs and stir in.
Pre heat the grill.
Pour in the egg mixture and cook for 5 minutes. Do not stir.
To finish cooking put under the preheated grill until the top is brown.
Serve sprinkled with the parsley.

I asked a recent question about what to bring to a cook out. I tried one of the recipes today (with a few of my own twists) and it turned out great! It's really simple....

Cooked spaghetti (I'd use smaller pasta, like the twists or macaroni)
1 cucumber diced
1 tomato diced
1 green bell pepper diced
1 red bell pepper diced (red bell peppers are too expensive for me, so I didn't use one...you can if you like)
1 onion diced
McCormick's Salad Supreme seasoning
1 bottle Italian dressing (I used the roasted red pepper kind with parmesan cheese)

Cook noodles and add ingredients as necessary! It's as simple as that! This tastes best served cold...


And if you'd like to bring a dessert try this one for key lime tarts...I love it!

24 key lime cooler cookies (you can double this recipe easily)
8 ounces softened cream cheese
1 egg
A half of a cup of sugar
2 tablespoons lime juice (key lime juice is best)
1 teaspoon lime zest (not necessary, but easily done since you need the juice anyway)
Sweetened whipped cream
More lime zest or some mint leaves for garnish if you like

Preheat your oven to 350 degrees. Fill two (12 muffin) mini muffin pans with paper cups and spray with cooking spray. Place one cookie into each cup flat side down. Beat the cream cheese, egg, sugar, lime juice, and zest until well mixed. Fill the cups up to the top. Bake the tarts for 10 to 12 minutes (you don't want them brown...a little golden at most). Take them out to cool. Get a large zip lock baggie and fill with the whipped cream....cut off a small corner of the bag. Pipe the whipped cream onto the tarts and garnish with whatever you like.

Jenny's Pasta Salad

1 box Rotini Spiral Pasta, cooked, drained, and cooled
1 bottle Berensteins Cheese Fantastico Dressing
1 chub hard salami, cubed
1 4oz container Feta Cheese
1 red bell pepper, chopped
1 can sliced olives
1 bunch green onion, chopped

Mix the above together and cover. Let sit at least for 4 hours, preferably overnight. Stir before serving. Yum!

*************Dijon Green Beans

1-1/2 pounds fresh green beans, trimmed or 3 can of green beans
2 tablespoons red wine vinegar
2 tablespoons olive oil
2 tablespoons Dijon mustard
½ teaspoon salt
¼ teaspoon pepper
1 cup of grape tomatoes, halved
½ small red/ purple onion, sliced
2 tablespoons grated parmesan cheese

Place fresh beans in a large saucepan; cover with water. Bring to a boil. Cook, uncover, for 8-10 minutes or until crisp-tender. Or open canned green beans.

Meanwhile, for dressing, whisk the vinegar, oil, mustard, salt and pepper in a small bow. Drain beans; place in a large bowl. Add tomatoes and onion. Drizzle with dressing and toss a coat. Sprinkle with Parmesan cheese.
