You can do one of two things. 1. Tell the truth. Let the employer know that your leaving your old job because it pays next to nothing. Funny enough a lot of employers respect this answer. 2. Simply say that your looking to try something new. You can further back it up by saying that you enjoy what you do but this oppertunity offers you some new and interesting possiblities. Btw, whatever you do DONT BS THE EMPLOYER TOO MUCH. Keep your answer simple and move on!

I know this is a joke, but it sort of reminds me when I was trying to attract senior management to my company from a rival company.
