I have all the ingredients besides Eggs Can I use Evaporated Milk Instead????

I never use eggs to make fried okra. I soak the sliced okra in regular milk for 15 minutes or so, then bread as usual.
The okra thickens the milk on its own so the breading sticks well and I never have any trouble with it.

you probably could, but the idea of fried okra is to get a thick crispy coat. the evap. milk would do that.

Yeah, you can just get the slices a little wetter w/ evap or regular milk, then toss w/ seasoned corn meal.

I've always just rolled mine in seasoned cornflower and fried away - never used eggs.

yes i would think that would work fine. my grandma has made it with water / egg / cornmeal/flour mix. deep fried in vegetable oil. it's great with sliced summer tomatos.

I fry my okra in seasoned cornmeal. It is good & crunchy!!!
