why is it that when i do an amazin curry it sweats and goes watery when on the plate????does be lovely and thick in pot. is it the sweating of ingreadiants.

Once it's thickened and has cooked for 1 minute, turn off the heat. You are overcooking it and bursting the starch molecules that are holding your liquid in suspension.
