it's 1 of my fave foods and i wud like to find more xciting pancake recipes besides blueberries and choclate chips

Cousins Heritage Inn Apple Pancakes

4 Apples
3 Eggs
1/2 tsp. Baking Powder
1/2 C. Wheat Flour
Salt
Cinnamon
Toppings of your choice: such as Powdered Sugar, or Syrup

Grate or chop apples in food processor. Squeeze out excess juice. Put apples into mixing bowl. Mix with eggs. Combine flour, salt, cinnamon, and baking powder. Add to apples. Stir all ingredients together. Beat lightly with spoon. If mixture is still developing pools of juice, add more flour. Melt 2 Tablespoons of vegetable shortening in hot pan to that melted shortening is one inch deep. Drop 1 heaping tablespoon of batter at a time and press into ban. The thinner you get this, the better it will be. Garnish with the toppings for your choice.

Apple Pancakes With Maple Pecan Butter,

Yield: 16 to 18 (4-inch) pancakes

APPLE PANCAKES
2 large eggs
2 cups buttermilk
1/4 cup butter; melted
1 3/4 cups flour, all-purpose
3 tablespoons sugar, granulated
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon, ground
1/4 teaspoon nutmeg, ground
1 1/2 cups tart red apples; peeled and chopped

MAPLE PECAN BUTTER
1 cup butter; softened
3/4 cup pecans; chopped
1/2 cup maple syrup

Make Maple Pecan Butter. In small mixer bowl, beat butter on medium speed until light. Add pecans; mix well. Gradually beat in syrup. Set aside while making pancakes.

For Apple Pancakes: In medium bowl lightly beat eggs with wire whisk. Add buttermilk and melted butter and whisk until smooth. Add dry ingredients and mix only until moistened. Stir in apples.

Heat large non-stick griddle or skillet until hot. Melt a little of the butter on griddle until bubbly but not brown. For each pancake, spoon about 1/4 cup batter onto griddle. Cook until bubbles form and edges are cooked. Turn and cook until second side is golden. Keep pancakes warm on platter in 200 degree oven while preparing remaining batter. Serve warm with Maple Pecan Butter.

Gingerbread Pancakes with Lemon Sauce

2 Cups Bisquick baking mix
1 egg
1-1/3 cup milk
1/4 cup Molasses
1-1/2 teaspoon Ginger
1 teaspoon Cinnamon
1/2 teaspoon Cloves

Mix and cook on oiled griddle. Serve hot pancakes with cubed cream cheese and warm Lemon Sauce.

Lemon Sauce
1/2 Cup Butter (1 stick)(No substitutes)
1 Cup Sugar
1/4 Cup Water
1 egg, beaten
3 Tablespoons Lemon Juice

Mix, cook over low heat, stirring constantly, until smooth. Keep warm.

Banana Sour Cream Pancakes

1½ cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1½ teaspoons kosher salt
½ cup sour cream
3/4 cup plus 1 tablespoon milk
2 extra-large eggs
1 teaspoon pure vanilla extract
1 teaspoon grated lemon zest
Unsalted butter
2 ripe bananas, diced, plus extra for serving
Pure maple syrup

In a medium bowl, sift together the flour, sugar, baking powder, and salt. Whisk together the sour cream, milk, eggs, vanilla, and lemon zest. Add the wet ingredients to the dry ones, mixing only until combined.

Melt 1 tablespoon of butter in a large skillet over medium-low heat until it bubbles. Ladle the pancake batter into the pan. Distribute a rounded tablespoon of bananas on each pancake. Cook for 2 to 3 minutes, until bubbles appear on top and the underside is nicely browned. Flip the pancakes and then cook for another minute, until browned. Wipe out the pan with a paper towel, add more butter to the pan, and continue cooking pancakes until all the batter is used. Serve with sliced bananas, butter, and maple syrup.

Try pancakes with ice cream sometime. It makes a great desert. A friend of mine from Zimbabwe introduced me to eating pancakes that way, evidently it's a popular thing over there.

Personally I eat my pancakes and waffles with peanut butter instead of syrup.

Also try making pancakes out of cornbread mix. They're delicious.

Follow the recipe on the Bisquick box and add a teaspoon of vanilla and a little cinnamon.

Some very EXCITING things you WOULD be able to put in pancake batter are cinnamon, whole kernel corn, mashed bananas, or you can serve them with whipped cream instead of syrup, you can use powdered sugar, jelly, or cream cheese.

I make my pancakes with strawberry and banana, I add chocolate chips to my husbands.

i love to make banana walnut pancakes.

and pear pancakes with red wine syrup (just reduce red wine with water, sugar and a cinnamon stick)

I love smashed bananas in my mix. The other day I had some ripe peaches and threw them in the mix. Delish.

pumpkin ones / i use the canned pumkin in it / also add choc chips to it
vanilla extract and pecans
